Cranberries are a classic fruit to cook with in the winter months as they line the shelves ready for festive recipes.

Today I'm combining fresh cranberries with apples to create a delicious compote that's perfect for spooning on to a bowl of hot porridge. It's sweet and sour with a hint of spice.

It's an easy recipe or make in the morning or can be made ahead of you want to have it ready to go first thing when you wake up.

Ingredients

You don't need any complicated ingredients to make this recipe, just:

  • Fresh cranberries
  • Apples
  • Caster sugar
  • Spices
  • Porridge oats
  • Plant milk (I like to use oat milk or almond milk)

Step-by-step Instructions

  • Step 1: heat the fruit in a sauce pan until it has softened.

  • Step 2: heat the milk and porridge oats in a pan until thickened.

  • Step 3: serve the compote alongside the porridge in a deep bowl.

Substitutions

Don't have fresh fruit available to you? Frozen apples and cranberries will work just as well. You can also swap caster sugar for any other type of sugar you have to hand.

Variations

Swap out apples for pears and cranberries for other red berries for a slightly different fruity flavour.

Equipment

You'll need two saucepans and two spatulas for this recipe. One for the compote and one for the porridge.

Storage

You can make the compote ahead and keep it in the fridge for 2-3 days. You can then either spoon it on your porridge while it's still cold for a contrast in temperatures or reheat it in a pan of you prefer it warm.

Frequently asked questions

My porridge is watery, what do I do?

Simply simmer and continue to stir for a little longer. It will thicken up as the oats absorb the liquid and some of it evaporates.

My porridge is too thick, what do I do?

Just add a little milk until it's your desired consistency.

The compote is really sour, how do I fix this?

Add a tablespoon more sugar until it's sweet enough to your tastes.

Can I make this in the microwave?

You can't make the compote in the microwave but you can make the porridge. Mix the porridge oats, milk or water and a pinch of salt in a deep microwaveable bowl. 
Microwave on 'high' for 2 and a half minutes. Remove the porridge from the microwave and stir well. Place back in the microwave and heat on 'high' for another 2 minutes. Let the porridge stand for a minute before serving.

Ingredients
  

For the compote

  • 50 g apple diced
  • 50 g cranberries fresh or frozen
  • 1 tablespoon caster sugar
  • ¼ teaspoon ground cinnamon
  • 1 star anise

For the porridge

  • 50 g jumbo oats
  • 300 ml plant milk

Instructions
 

To make the compote

  • Add the fruit, sugar and spices to a saucepan with a splash of water and place on a medium heat.
  • Stir until the sugar has dissolved.
  • Turn the heat up high until the liquid starts to simmer, stirring regularly until the cranberries start to burst.
  • Remove the star anise and place to one side while you make the porridge.

To make on the hob

  • Add the oats to a saucepan along with the plant milk.
  • Bring to the boil and simmer for 4-5 minutes, stirring regularly to make sure it doesn't stick to the bottom of the pan and to help the oats break down.

To serve

  • Spoon the fruit compote over the cooked porridge and enjoy!
