Ingredients
  

For the strawberry chia jam

  • 150 grames strawberries chopped
  • 1 tablespoon chia seeds
  • 2 teaspoon maple syrup
  • 1 teaspoon lemon juice

For the vegan yogurt layer

  • 100 grams vegan yogurt

For the matcha overnight oats

  • 40 g rolled oats
  • 120 ml plant milk
  • 1 teaspoon matcha powder
  • 1 teaspoon maple syrup
  • ½ teaspoon vanilla extract

For the matcha dusting

  • 1 teaspoon matcha powder

Instructions
 

  • In a mixing bowl, whisk the matcha powder with plant milk until smooth.
  • Stir in oats, maple syrup, vanilla, and chia seeds. Let this sit in the fridge for at least 4 hours to thicken.
  • In a separate bowl, mash strawberries in a bowl and mix with chia seeds, maple syrup, and lemon juice. Let this sit in the fridge for at least 30 minutes to thicken.
  • To assemble, spoon the overnight oats into your jar followed by the strawberry chia seed jam. Top with the vegan plain yogurt and a dusting of matcha powder.
