For the strawberry chia jam
- 150 grames strawberries chopped
- 1 tablespoon chia seeds
- 2 teaspoon maple syrup
- 1 teaspoon lemon juice
For the vegan yogurt layer
For the matcha overnight oats
- 40 g rolled oats
- 120 ml plant milk
- 1 teaspoon matcha powder
- 1 teaspoon maple syrup
- ½ teaspoon vanilla extract
In a mixing bowl, whisk the matcha powder with plant milk until smooth.
Stir in oats, maple syrup, vanilla, and chia seeds. Let this sit in the fridge for at least 4 hours to thicken.
In a separate bowl, mash strawberries in a bowl and mix with chia seeds, maple syrup, and lemon juice. Let this sit in the fridge for at least 30 minutes to thicken.
To assemble, spoon the overnight oats into your jar followed by the strawberry chia seed jam. Top with the vegan plain yogurt and a dusting of matcha powder.
