Apple and Cranberry Porridge

Ingredients

For the compote

  • 50 g apple diced
  • 50 g cranberries fresh or frozen
  • 1 tablespoon caster sugar
  • ¼ teaspoon ground cinnamon
  • 1 star anise

For the porridge

  • 50 g jumbo oats
  • 300 ml plant milk

Instructions

To make the compote

  • Add the fruit, sugar and spices to a saucepan with a splash of water and place on a medium heat.
  • Stir until the sugar has dissolved.
  • Turn the heat up high until the liquid starts to simmer, stirring regularly until the cranberries start to burst.
  • Remove the star anise and place to one side while you make the porridge.

To make on the hob

  • Add the oats to a saucepan along with the plant milk.
  • Bring to the boil and simmer for 4-5 minutes, stirring regularly to make sure it doesn't stick to the bottom of the pan and to help the oats break down.

To serve

  • Spoon the fruit compote over the cooked porridge and enjoy!
