Apple and Cranberry Porridge

For the compote
- 50 g apple diced
- 50 g cranberries fresh or frozen
- 1 tablespoon caster sugar
- ¼ teaspoon ground cinnamon
- 1 star anise
For the porridge
- 50 g jumbo oats
- 300 ml plant milk
To make the compote
Add the fruit, sugar and spices to a saucepan with a splash of water and place on a medium heat.
Stir until the sugar has dissolved.
Turn the heat up high until the liquid starts to simmer, stirring regularly until the cranberries start to burst.
Remove the star anise and place to one side while you make the porridge.
To make on the hob
Add the oats to a saucepan along with the plant milk.
Bring to the boil and simmer for 4-5 minutes, stirring regularly to make sure it doesn't stick to the bottom of the pan and to help the oats break down.
