Learn how to make the best Watermelon Agua Fresca (Agua Fresca de Sandía) with fresh watermelon, lime, and mint. This easy vegan Mexican-inspired drink is naturally sweet, incredibly refreshing, and perfect for hot summer days. Get the recipe below.

Agua Fresca de Sandía literally translates to "fresh watermelon water." Despite its simple name, this vibrant drink has been a staple throughout Mexico and much of Central America for generations. Agua fresca is made by blending fresh fruit with water and a touch of sugar to create a light, thirst-quenching beverage that's perfect for warm climates. As the UK faces more and more heatwaves in the summer I'm reaching for drinks just like this one.
The good thing about watermelon agua fresca is that it's naturally vegan. Unlike some modern café versions that include dairy, condensed milk, cream, yogurt, or sweetened syrups for extra richness, the traditional drink relies solely on ripe fruit, water, citrus, and a little sugar if needed.
To make this recipe even more exciting, I've added a handful of fresh mint and a tiny pinch of flaky sea salt. The mint adds cooling freshness while the salt enhances the watermelon’s natural sweetness without making the drink taste salty. A splash of sparkling water just before serving adds a light fizz that transforms this classic drink into a refreshing summer mocktail.

Ingredients
The ingredients list for this dish is pretty straightforward:
- Ripe seedless watermelon
- Limes
- Fresh mint leaves
- Agave syrup
- Flaky sea salt
- Sparkling water
- Ice cubes
The only ingredient that may be tricky to hunt down is agave syrup but I've suggested some substitutions below if you can't get hold of any.
Step-by-step instructions

- Step 1: Cut the watermelon into cubes and remove any seeds.

- Step 2: Blend the watermelon, water, lime juice, mint, sweetener, and sea salt until smooth.

- Step 3: Pour into ice-filled glasses and top with sparkling water.

- Step 4: Garnish with fresh mint and lime.
Hint: Chilling all the ingredients beforehand prevents the ice from diluting the drink too quickly.
Substitutions
Need to make some swaps? Don't worry I've got you covered!
- Agave syrup: Maple syrup or simple syrup both work well.
- Mint: Replace with fresh basil for a unique herbal twist.
- Lime: Lemon offers a slightly softer citrus flavour.
- Sparkling water: Omit for a classic still version.
- Watermelon: Try cantaloupe or honeydew.
Variations
This recipe is a great base that can be adapted to include a range of other flavours. Some of those variations are set out below:
- Tropical Watermelon Agua Fresca: Blend in one cup of fresh pineapple.
- Strawberry Watermelon Agua Fresca: Add one cup of ripe strawberries.
- Cucumber Watermelon Agua Fresca: Blend with half a peeled cucumber for an extra refreshing drink.
- Spicy Watermelon Agua Fresca: Add a tiny pinch of Tajín seasoning or chilli powder around the rim of the glass.
- Coconut Water Agua Fresca: Replace half the water with chilled coconut water for added electrolytes and tropical flavour.

Equipment
This may feel like a lot of kitchen equipment for just a simple drink but each is necessary to get the perfect Agua Fresca:
- High-speed blender
- Sharp knife
- Chopping board
- Fine mesh sieve (optional)
- Large jug
- Citrus juicer
- Serving glasses
Storage
You can store this Watermelon Agua Fresca in an airtight pitcher or container in the refrigerator for up to 3 days. But, you will need to stir well before serving, as natural separation is completely normal.
Freezing is also possible. Freeze leftovers into ice cube trays and blend later into frozen slushies.

Expert tips
- Chill the watermelon before blending for the coldest, most refreshing drink.
- Taste before adding sweetener - ripe watermelon is often sweet enough on its own.
- Blend in short bursts to avoid over-aerating the drink, which can create excessive foam.
- Add sparkling water only just before serving to preserve its fizz.
- For entertaining, freeze small watermelon cubes and use them instead of ice so your drink stays cold without becoming diluted.
