Watermelon Agua Fresca

- 1 kg watermelon
- 500 ml cold water
- 2 limes juice only
- 8 mint leaves
- 2 tablespoons agave syrup adjust to taste
- 1 pinch flaky sea salt
- Ice to serve
- sparkling water to top up
Cut the watermelon into cubes and remove any large black seeds.
Add the watermelon, cold water, lime juice, mint leaves, agave syrup (if using), and sea salt to a blender.
Blend until completely smooth.
For a silky smooth agua fresca, pour the mixture through a fine mesh sieve into a large jug. This is entirely optional. If you enjoy a little more texture, skip this step.
Refrigerate for at least 30 minutes.
Fill glasses with ice, pour over the chilled agua fresca, and top with a splash of sparkling water if desired.
Garnish with fresh mint and lime slices.
