Crispy Tofu Fajitas

These Crispy Tofu Fajitas use tofu as a meat substitute for this Mexican inspired dish. Wrap the spicy tofu and veggies in a tortilla wrap for delicious vegan fajitas. Get the recipe below.

Vegan Fajitas

Vegan fajitas are a versatile, delicious, and nutritious meal. They’re also easy to customise and quick to prepare making them perfect for midweek meals.

Fajitas are usually strips of meat and veggies such as peppers and onions which are sauteed and then served wrapped up in tortillas. For this plant based alternative I used strips of tofu in a crispy, seasoned coating.

Flour tortillas are classic, but corn tortillas are a great gluten-free option. I've used my homemade flour tortillas for these Crispy Tofu Fajitas but you could also use store bought to make things easier if you're making these in the middle of the week.

How to make crispy tofu

The secret to getting crispy tofu is to coat the tofu in cornflour before frying. It's a tried and tested way of cooking tofu that most vegans are familiar with.

For these Crispy Tofu Fajitas we take things up a notch by adding a range of dried herbs and spices to the cornflour.

As the tofu fries it not only gets crispy but takes on all of the flavours of the seasoning.

You don't need a lot of oil to fry the tofu, we're not deep frying here. If your tofu is too oily just pat it dry with kitchen roll when you remove it from the pan. This will also ensure it stays crisp!

Once you've cooked your tofu, veggies and got your tortillas ready then you're good to assemble!

Customise your fajitas

The core component of this recipe is the spicy tofu but you can play around with the rest of the dish. I already include peppers and onion in this recipe but why not try adding:

  • grated vegan cheese,
  • guacamole,
  • vegan sour cream.

Ingredients
  

For the Fajita Seasoning

  • 3 tablespoon cornflour
  • 2 teaspoon paprika
  • 1 teaspoon ground cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon ground coriander
  • 1 teaspoon dried oregano
  • ¼ teaspoon cayenne pepper

For the Fajitas

  • 2 tablespoon olive oil
  • 450 g extra firm tofu cut into strips
  • 1 red onion finely sliced
  • 1 bell pepper de-seeded and cut into strips

For Serving

  • 8 flour tortillas
  • 1 lime cut into wedges
  • 1 bunch coriander leaves only

Instructions
 

  • Mix the fajita seasoning together in a bowl.
  • Add the tofu to the bowl and toss until well coated.
  • Heat the oil in a large frying pan over medium heat.
  • Add the tofu to the pan and cook for 5 minutes or until crispy, turn over and repeat until the other side is crispy too.
  • Next add the bell pepper and red onion to the pan and saute alongside the tofu. Cook for 5 minutes or until the vegetables have softened.
  • Serve hot from the pan over flour tortillas with a squeeze of lime juice and a couple of coriander leaves to finish.
