  • Extra firm tofu
  • Soy sauce
  • Maple syrup
  • Balsamic vinegar
  • Liquid smoke
  • Cracked black pepper
  • Smoked paprika
  • Garlic powder
  • Onion powder
  • Mustard
  • Salt
  • Olive oil

  • Press tofu for 20–30 minutes.
  • Slice into thick steaks.

Substitutions

Storage

I don't recommend freezing these tofu steaks.

Top tip

Marinate the tofu overnight if possible. The longer it sits, the deeper and richer the peppered steak flavour becomes.

Frequently asked questions

What type of tofu works best?

Extra firm tofu is best because it holds its shape and develops a meaty texture.

Can I cook the steaks in an oven?

Yes. Bake at 220C / 425F for 30–35 minutes, flipping halfway through.

Do I need a tofu press?

No. You can wrap tofu in paper towels and place a heavy pan on top.

Is liquid smoke necessary?

It adds authentic smoky BBQ flavour, but smoked paprika and smoked salt can help if you do not have it.

Where can I buy liquid smoke?

I buy mine online - it's readily available on Amazon.

Ingredients
  

  • 400 g extra-firm tofu
  • 4 tablespoons soy sauce
  • 1 tablespoon maple syrup
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon liquid smoke
  • 2 teaspoons cracked black pepper
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon ground mustard
  • ½ teaspoon salt
  • 2 tablespoons olive oil

Instructions
 

  • Remove the tofu from its packaging and press it for at least 20–30 minutes to remove excess moisture. This helps the tofu absorb the marinade and develop a firmer texture.
  • Cut the tofu into 3-4 thick steak-like slabs.
  • In a bowl, whisk together the soy sauce, maple syrup, balsamic vinegar, liquid smoke, black pepper, smoked paprika, garlic powder, onion powder, mustard, salt, and olive oil.
  • Place the tofu steaks in a shallow dish or zip-top bag and pour over the marinade. Let marinate for at least 1 hour, or overnight for maximum flavour.
  • Heat a grill pan, BBQ, or skillet over medium-high heat.
  • Lightly oil the surface and cook the tofu steaks for 4–5 minutes per side until deeply browned and caramelised.
  • Brush extra marinade over the tofu while cooking.
