- 400 g extra-firm tofu
- 4 tablespoons soy sauce
- 1 tablespoon maple syrup
- 1 tablespoon balsamic vinegar
- 1 teaspoon liquid smoke
- 2 teaspoons cracked black pepper
- 1 teaspoon smoked paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- ½ teaspoon ground mustard
- ½ teaspoon salt
- 2 tablespoons olive oil
Remove the tofu from its packaging and press it for at least 20–30 minutes to remove excess moisture. This helps the tofu absorb the marinade and develop a firmer texture.
Cut the tofu into 3-4 thick steak-like slabs.
In a bowl, whisk together the soy sauce, maple syrup, balsamic vinegar, liquid smoke, black pepper, smoked paprika, garlic powder, onion powder, mustard, salt, and olive oil.
Place the tofu steaks in a shallow dish or zip-top bag and pour over the marinade. Let marinate for at least 1 hour, or overnight for maximum flavour.
Heat a grill pan, BBQ, or skillet over medium-high heat.
Lightly oil the surface and cook the tofu steaks for 4–5 minutes per side until deeply browned and caramelised.
Brush extra marinade over the tofu while cooking.
