They say that breakfast is the most important meal of the day. But to be honest I prefer brunch, especially at Christmas. Whether you prefer breakfast or brunch, it must be decadent. Christmas is all about over the top indulgence and these Vegan Mince Pie Pancakes are no exception.
What are mince pie pancakes?
Mince pie pancakes are big and fluffy American style pancakes that have mincemeat dotted throughout the batter. The result are pancakes that taste just like mince pies!

How do you make mince pie pancakes vegan?
Making pancakes vegan is simple. I use self raising flour, mashed banana, soy milk and caster sugar to make American style pancakes that are light and fluffy without the need for any dairy or eggs.
Top tips for perfect vegan mince pie pancakes
The good news is that these mince pie pancakes are so easy to make you could enlist the help of excited children or do make them with a Christmas Eve hangover!
But if you want to really impress your guests on Christmas morning follow these simple tips:
- Weigh out your ingredients – avoid using cups and other unreliable/volume based measurements.
The recipe
Mince Pie Pancakes
Ingredients
- 2 bananas
- 2 tbsp sunflower oil for the batter
- 0.5 tsp cinnamon
- 1 pinch nutmeg
- 200 grams self raising flour
- 400 ml oat milk
- 1 tsp sunflower oil to grease your pan
- 12 tsp mincemeat usually used to make mince pies
- maple syrup optional, to serve
Instructions
- In a large bowl, mash the bananas with a fork before whisking together with the oil, and spices.
- Add in the flour and beat well until you have a thick paste.
- Slowly add in the milk whisking well in between each addition.
- Once the mix is fully combined and smooth, grease your pan with the tsp of sunflower oil.
- Heat the pan on a medium heat until hot.
- Add a tsp of mincemeat to the pan then ladle the batter on top and swirl to make a circle.
- Cook for roughly 2 minutes until bubbles begin to appear on the surface of the pancake.
- Using a spatula, carefully flip the pancake and cook for another 2 minutes.
- Transfer to a warm plate while using up the rest of the batter.
- Once you have cooked all of the batter, serve the pancakes warm with your favourite fruits and a drizzle of maple syrup.
