Mince pie pancakes are big and fluffy American style pancakes that have mincemeat dotted throughout the batter. The result are pancakes that taste just like mince pies!

Making pancakes vegan is simple. I use self raising flour, mashed banana, soy milk and caster sugar to make American style pancakes that are light and fluffy without the need for any dairy or eggs.

Ingredients
 
 

  • 2 bananas
  • 2 tbsp sunflower oil for the batter
  • 0.5 tsp cinnamon
  • 1 pinch nutmeg
  • 200 grams self raising flour
  • 400 ml oat milk
  • 1 tsp sunflower oil to grease your pan
  • 12 tsp mincemeat usually used to make mince pies
  • maple syrup optional, to serve

Instructions
 

  • In a large bowl, mash the bananas with a fork before whisking together with the oil, and spices.
  • Add in the flour and beat well until you have a thick paste.
  • Slowly add in the milk whisking well in between each addition.
  • Once the mix is fully combined and smooth, grease your pan with the tsp of sunflower oil.
  • Heat the pan on a medium heat until hot.
  • Add a tsp of mincemeat to the pan then ladle the batter on top and swirl to make a circle.
  • Cook for roughly 2 minutes until bubbles begin to appear on the surface of the pancake.
  • Using a spatula, carefully flip the pancake and cook for another 2 minutes.
  • Transfer to a warm plate while using up the rest of the batter.
  • Once you have cooked all of the batter, serve the pancakes warm with your favourite fruits and a drizzle of maple syrup.
