This spiced compote is a warming mix of apples, cardamom and rose water. It's a flavour combination that will have you coming back for more.

It's so versatile that you can try it as a topping for porridge or yogurt or use it in a similar way to jam on a slice of toast! It would also make a great filling for tarts, cakes and other desserts.

You only need 4 ingredients for this simple compote recipe:

  • Apples
  • Caster sugar
  • Rose water
  • Cardamom pods

Step-by-step Instructions

There are just 2 simple steps to make Apple, Cardamom and Rose Compote.

  • Step 1: place all of the ingredients into a saucepan and heat over a medium-low heat.

  • Step 2: Cook until the sugar has melted and the apple has broken down. Serve immediately or leave to cool.

Hint: cook the compote low and slow. If you turn it up too high you risk it catching and burning, particularly towards the end of cooking.

Substitutions

Don't have the exact ingredients? Don't worry. There are a few substitutions you can make.

  • Apples: apples are core to this recipe. I use cooking apples because... But, you could use eating apples if that's all you've got.
  • Sugar: I use caster sugar but maple syrup, honey (if you're not vegan) and granulated sugar would all work fine. I've also used sweetener in the past, just make sure you follow the guidelines on how much to use. Mine is 50% the amount of sugar listed in the recipe.
  • Cardamom: this recipe calls for cardamom pods but you could swap this for a pinch of ground cardamom instead.

Variations

You may want to put your own spin on this recipe or try different ways of tweaking it. Here are some of my favourite suggestions:

  • Ginger: instead of rose water use ginger for a spicier version.
  • Cinnamon: swap cardamom and rose water for cinnamon for a warming, autumnal version

Equipment

Making compote is easy, you'll just need scales to weigh your ingredients, a chopping board and knife to chop the apple, a saucepan and a spatula for stirring.

Storage

This compote will last well for a couple of days kept in an airtight container or jar in the fridge.

Top tip

To stop the apples browning toss them in a tablespoon of lemon juice.

Ingredients
  

  • 350 g apples cut into 1 inch cubes
  • 50 g caster sugar
  • 1 teaspoon rose water
  • 3 cardamom pods
  • 50 ml water

Instructions
 

  • Place all of the ingredients into a heavy bottomed saucepan and place over a medium-low heat.
  • Cook the apples until the sugar has melted and the apples have softened and begun to break down.
  • Use immediately or leave to cool and store in an airtight container or jar in the fridge.
