The cheese sandwich has to be one of the all time classics. I've taken the cheese sandwich to the next level by spicing it up with some chilli jam. And of course I've used one of my favourite vegan cheese brands to keep things plant based.

This Vegan Cheese and Chilli Jam sandwich is built up of:
- Ciabatta roll
- Spinach
- Crispy tofu
- Vegan cheese
- Chilli jam
The result is a slightly salty, slightly sweet sandwich that also has a little extra heat to liven up the taste buds.
Cheese and chilli jam is a fantastic combo that I love on a cheeseboard so I thought why not turn it into a sandwich?
The crispy tofu in the middle of the sandwich gives you some extra protein making this a more rounded meal. And, it keeps you fuller for longer which is essential if you're meeting this in the middle of your day.
Which vegan cheese should I buy?
In my opinion, this sandwich works best with a vegan buratta or mozzarella cheese. You'll see from the pictures I've used a creamy cheese.
Julienne Bruno make a fantastic vegan buratta and I am Nut OK do a very convincing vegan mozzarella. Both are available on Ocado as well as other online stores.
Step-by-step Instructions
I'm not sure I really need to tell you how to assemble a sandwich but just in case...
- Heat the oil in a pan and fry your tofu until crisp and golden.
- Cut your ciabatta roll in half and layer up the spinach, tofu, vegan cheese then chilli jam.
- Top with the other half of the roll and tuck in.
Make ahead
This recipe for a Vegan Cheese and Chilli Jam Sandwich tastes great cold but I prefer to serve it hot when the tofu is still warm and the cheese has begun to melt slightly. But ultimately, it's up to you.
Top Tip
Pick a cheese that goes stretchy when melted, rather than runny. Otherwise you'll end up in a right cheesy mess!

Vegan Cheese and Chilli Jam Sandwich
Ingredients
- 1 tablespoon oil
- 2 slices tofu
- 1 ciabatta roll
- 1 handful spinach
- 100 g vegan cheese a soft cheese like buratta or mozzarella
- 1 tablespoon chilli jam
Instructions
- Heat the oil in a pan.
- Once the oil is hot, lay your tofu slices into the oil and cook for 5 minutes until golden brown and crispy.
- Flip the tofu slices over and cook for another 5 minutes.
- To assemble your sandwich, cut your ciabatta roll in half.
- First layer up the spinach followed by the cooked tofu, vegan cheese and then chilli jam.
- Finish with the top of the roll and enjoy!
