This Vegan "Tuna" and Sweetcorn Sandwich is a delicious lunch recipe made from chickpeas, nori paper and other ingredients to mimic fish. Get the recipe below.

Simple sandwiches

There are some classic sandwich fillings that will last the test of time; ham, cheese, tuna. But sadly none of these are vegan unless you rely on processed meat substitutes.

But, I've now got a simple recipe for a Vegan Tuna and Sweetcorn Sandwich recipe to share with you. It's the perfect way of creating a fishy texture and flavour without relying on processed ingredients.

Vegan Tuna and Sweetcorn Sandwich

Vegan fish alternatives

You can mimic fish and seafood just by using plants. Depending on the type of fish you're trying to mimic you might use tofu, banana blossom, jackfruit or even mushrooms!

But, to mimic tinned tuna in this recipe, we use tinned chickpeas!

Tinned chickpeas work in this recipe because they become flaky, like tuna, when they are mashed. They are also a great flavour carriers.

To get the fishy flavour I like to use nori sheets. You might be familiar with nori as an essential ingredient in sushi making. Nori is just dried edible seaweed that has been turned into sheets. I cut this into tiny pieces and stir together with the other filling ingredients to impart the flavour of the sea. Salty capers also help develop this flavour profile.

You don't need much more than the chickpeas, nori and capers to get that fishy feeling which means the recipe is what brings it altogether - mayonnaise, red onion and sweetcorn, as well as salt and pepper to taste.

This all gets mixed up before being spread on to slices of bread and topped with crisp gem lettuce.

It's a really tasty sandwich that is perfect for lunchtime whether you're at home, in the office or out and about.

Ingredients
  

  • 235 g chickpeas from a 400g tin, drained and rinsed
  • 0.5 red onion finely diced
  • 1 tablespoon capers finely diced
  • 1 sheet nori cut into short, thin strips
  • 198 g sweetcorn
  • 2 tablespoon vegan mayonnaise
  • salt and pepper to taste
  • 4 leaves gem lettuce
  • 4 slices bread

Instructions
 

  • Begin by mashing the chickpeas until they are flaky.
  • Add in the red onion, capers, nori, sweetcorn and mayonnaise.
  • Mix the sandwich filling ingredients well then season to taste.
  • Spread half over one slice of bread then top with 2 of the gem lettuce leaves, followed by the second slice of bread. Repeat with the second sandwich.
  • Cut in half and serve.
