The perfect packed lunch
If you’re looking for a quick, satisfying, and delicious vegan sandwich that bursts with bold flavours, this Vegan Pesto and Sun-dried Tomato Sandwich is the recipe for you! The richness of pesto, and the tangy sweetness of sun dried tomatoes is so moreish.
Best of all, it’s plant-based, making it an ideal option for anyone following a vegan diet or who just wants to cut down on the amount of meat they eat.
It’s delicious hot but you could easily wrap this up and put it in your bag to enjoy at lunch whether you’re out and about or sat at your desk. It really is the perfect lunch recipe. If you do decide to make it ahead of time, just make sure you’ve let the tofu cool down before building it.
Vegan pesto
Traditional pesto contains Parmesan cheese, but a vegan version swaps it out for equally tasty alternatives like nutritional yeast or even vegan Parmesan for the saltiness that would ordinarily come from the Parmesan. These substitutions keep the pesto creamy and packed with flavour without any animal products.
You can make your own pesto or opt for store bought, it’s up to you! If you want to mix things up a bit you could go for one of these pesto variations:
Sun-dried tomatoes
Sun-dried tomatoes are the other hero in this sandwich, and they bring an intense, slightly sweet, and tangy flavour that pairs beautifully with the pesto.
Fresh tomatoes have their time and place but what I love about sun-dried tomatoes is their chewy and concentrated, adding a burst of umami to every bite.

Ciabatta rolls
For me this recipe has to be made with a ciabatta roll. I love the soft bounce of the bread but its also got a slightly tangy flavour which works really well with the other ingredients.
You could also just use sliced ciabatta.
If you can’t get hold of ciabatta rolls any white roll or sliced white bread will work fine.
The recipe
Vegan Pesto and Sun-dried Tomato Sandwich
Ingredients
- 1 tbsp olive oil
- 2 slices tofu
- 1 ciabatta roll
- 2 tsp vegan pesto
- 1 handful spinach
- 6 sun-dried tomatoes
Instructions
- Begin by heating the olive oil in a pan.
- Once it is hot, add the two slices of tofu and cook for 5 minutes until golden brown and crisp.
- Flip over and cook for another 5 minutes until that side is also golden brown and crisp.
- When you're ready to assemble, first spread the pesto across both sides of the roll.
- Begin to layer up with the spinach, followed by the tofu and sun-dried tomatoes.
- Finish with the top of the roll and enjoy!
