- 1 tablespoon olive oil
- 2 slices tofu
- 1 ciabatta roll
- 2 teaspoon vegan pesto
- 1 handful spinach
- 6 sun-dried tomatoes
Begin by heating the olive oil in a pan.
Once it is hot, add the two slices of tofu and cook for 5 minutes until golden brown and crisp.
Flip over and cook for another 5 minutes until that side is also golden brown and crisp.
When you're ready to assemble, first spread the pesto across both sides of the roll.
Begin to layer up with the spinach, followed by the tofu and sun-dried tomatoes.
Finish with the top of the roll and enjoy!
