Ingredients

  • 1 tablespoon olive oil
  • 2 slices tofu
  • 1 ciabatta roll
  • 2 teaspoon vegan pesto
  • 1 handful spinach
  • 6 sun-dried tomatoes

Instructions

  • Begin by heating the olive oil in a pan.
  • Once it is hot, add the two slices of tofu and cook for 5 minutes until golden brown and crisp.
  • Flip over and cook for another 5 minutes until that side is also golden brown and crisp.
  • When you're ready to assemble, first spread the pesto across both sides of the roll.
  • Begin to layer up with the spinach, followed by the tofu and sun-dried tomatoes.
  • Finish with the top of the roll and enjoy!
