Healthy Breakfasts
They say the best way to start the day is with a healthy breakfast. And there’s science to back it up. Apparently, breakfast supplies glucose to boost your energy levels after a long night sleeping. A healthy breakfast should also contain a whole range of other nutrients for a balanced meal.
This Cherry and Almond Granola is perfect for enjoying after you’ve woken from your slumber. It’s made from rolled oats, flaked almonds, sunflower seeds, flavoured with maple syrup, cinnamon and dried cherries.
What I love about it is that it’s crunchy texture with burst of soft cherries making it perfect for serving with yogurt or milk.
Muesli or Granola? What’s the difference?
The main difference between muesli and granola is that granola is baked with sweeteners. Take away the maple syrup and baking in this recipe and you’ve got yourself a fantastic Cherry and Almond Muesli recipe!
If you’ve tried my Maple and Pecan Granola you’ll know that granola and muesli have very similar roots. They were both developed by doctors who were looking for healthy breakfasts to help heal their patients.
My Cherry and Almond Granola is my twist on the original granola recipe. I think it’s got a wonderful crisp texture but also a wonderful sweet, nutty flavour. It puts a real spring on yourself making it the best way to start the day.
How to make granola
The process for granola essentially involves two steps:
- Mix together the ingredients; and
- Bake the granola in the oven.
I have three bits of advice for making this easy recipe even easier.
When mixing the ingredients together stir in between each addition of maple syrup. This makes sure that its distributed evenly and everything is lightly coated in the maple syrup.
When it comes to baking the granola, make sure that it’s spread out just one layer thick. If you crowd the granola then it won’t crisp up as quickly and you’ll need to stir it and leave it in the oven for longer.
Once your cooking time is up, I leave the granola in the oven as it cools. This makes sure it’s extra crisp.
What makes this granola vegan?
You might not realise that granola is sometimes not vegan. This is because some varieties are made with honey.
This Cherry and Almond Granola uses maple syrup so it’s perfect for anyone following a plant based diet.
The recipe
Vegan Cherry and Almond Granola
Ingredients
- 150 grams rolled oats
- 75 g flaked almonds
- 50 grams pumpkin seeds
- 75 g dried cherries
- 1 tsp cinnamon
- 1 tbsp vegetable oil
- 5 tsp maple syrup
Instructions
- Pre-heat your oven to 150C / 300F / gas mark 3.
- In a bowl mix the oats, nuts, seeds, cherries and cinnamon.
- Add the oil and maple syrup and mix well until all of the oats/nuts/seeds are coated.
- Pour the granola on to a large baking tray and spread out into just one layer.
- Cook for 10 – 15 minutes or until starting to brown and crisp.
- Leave to cool before storing in an air tight container or jar.
