Raspberry and Passion Fruit Virgin Mojito

This fun and fruity mocktail recipe is a twist on the classic mojito. It is perfect for long summer days.

A few things you should know about me: I have a sweet tooth, I love fizzy drinks and I am partial to a cocktail when the sun comes out. But, I don't deal particularly well in the heat. Unless, I'm wearing something floaty, sat next to a swimming pool and sipping on a mojito.

We've been having a heatwave now for well over two weeks and it doesn't look like it is going anywhere. The problem is I can't keep coming home, sticking my feet in my paddling pool and making yet another cocktail. So instead, I've started turning my hand to virgin cocktails - or "mocktails".

Mocktails are just cocktails without the booze. They have all of the flavour but none of the side effects of alcohol! Leaving out the booze also makes them lighter in terms of calories if that's something you're also worried about.

Feeling fruity

Fruity cocktails have always been my favourite. Luckily for me, I have berries that grow in my back garden and so in the summer there's always fruit on hand. Raspberries were the starting point for this particular mocktail. We also grow mint in our kitchen garden, mainly for classic mojitos but it was the obvious choice for this recipe too.

A fruity mojito seemed like the best idea. Instead of using sweet rum I have used passion fruit! I scooped out the bright yellow pulp and muddled it with the fresh raspberries. This is definitely served best as a long drink so muddle it in a tall glass. Add a good handful of ice cubes and some fresh mint was added to the glass. Then top it off with some soda water. Last but not least, garnish with a few mint leaves and a few more raspberries.

The result? A Raspberry and Passion Fruit virgin Mojito, which tasted like sunshine and cooled me down perfectly.

Ingredients
 
 

  • 5 mint leaves fresh
  • ½ lime juice only
  • 1 teaspoon white sugar
  • 1 passion fruit pulp
  • 5 raspberries fresh
  • 1 cup ice cubes crushed
  • 200 mililitres soda water

Instructions
 

  • Muddle together the mint leaves, lime juice, sugar, passion fruit pulp and raspberries in a tall glass.
  • Top the glass up with crushed ice before pouring over the soda water.
  • Serve immediately.

    I don't cope well with the heat either, and have had a permanent heat rash on my arm for the last two weeks or more! I love the idea of cocktails and cold foot baths, and yes good idea to make some of them virgin! Love the look of this.

    Mocktails are perfect for this type of weather. I wouldn't fair too well with alcohol and heat, so a refreshing cold drink is just what you want. Beautiful colour, and the flavours must be amazing.
