I love a simple stir fry. Something that can be thrown together in minutes but is full of flavour and texture.

To stir fry is a fast paced cooking method which means that the veggies you’re cooking retain some bite. Exactly what we want in this recipe for stir fried choi sum.

What is choi sum?

Choi sum goes by a couple of names (choy sum, yu choy, even Chinese flowering cabbage).

It is perhaps not as well known as other greens like pak choi but it’s just as delicious. In fact, I’d say it has even more flavour! To me it is sweet with a hint of mustard.

How to cook choi sum

As with any stir fry, in this recipe I cook choi sum hard and fast. The result is that the leaves wilt but there remains a little chew and bite to the stems.

You could blanch it instead but I prefer to stir fry.

What if I can’t find choi sum?

Choi sum isn’t found in Tesco, Asda or Sainsburys very often. You’re much more likely to find it in an Asian supermarket.

If you can’t get hold of it you can use any green leaves whether that’s pak choi, kale, or even spinach.

Garlic and ginger

To compliment the flavour of the choi sum I stir fry it with a mixture of garlic, ginger, soy sauce, Shaoxing wine and toasted sesame oil with a pin of white pepper.

Ingredients
  

  • 1 tsp vegetable oil
  • 200 g choi sum
  • 4 spring onions sliced lengthways
  • 2 garlic cloves minced
  • 1 tsp root ginger minced
  • 2 tsps light soy sauce
  • 1 tsp Shaoxing wine
  • 1 tsp toasted sesame oil
  • 1 pinch ground white pepper

Instructions
 

  • Heat the vegetable oil in your wok.
  • Add the choi sum and cook for 1 – 2 minutes until it just starts to wilt.
  • Next add the garlic, ginger, soy sauce and Shaoxing wine and stir to coat the choi sum.
  • Once coated, add the sesame oil and pinch of pepper.
  • Serve while piping hot.
