What are baked oats?
The best way of describing baked oats is that it is porridge that has been baked in the oven, often with mix-ins like fruit or chocolate chips. The result is a cake-like dish bursting with flavour.
Baked oats are great for breakfast or dessert.
Why should I eat baked oats?
Oats are incredibly nutrient dense. They have high amounts of fibre, vitamins and minerals. In fact oats are known to lower blood sugar and cholesterol levels making them perfect for looking after your heart health. Plus they are a fantastic source of energy.
Adding a fruit like blueberries makes them even better for you. Did you know that blueberries are packed full of antioxidants. They’e thought to prevent heart disease, help to regulate blood sugar, improve memory and even maintain eye health!
With all of those health benefits they are the perfect way to start the day or a healthier way of enjoying pudding.
How to make vegan baked oats
Regular baked oats include eggs amongst the other ingredients but we don’t need them here thanks to the baking powder, banana and plant milk which has much the same effect, keeping them light and fluffy and binding the rest of the ingredients together.
Baked oats are so simple to make. Chuck all of the ingredients in a blender, pour into a dish and bake. That’s right, it doesn’t get easier than that.

Vegan Blueberry Baked Oats
Equipment
- 1 Blender
Ingredients
- 150 g rolled oats
- 1 tsp baking powder
- 1 banana
- 1 tbsp maple syrup
- 300 ml plant milk
- 1 tsp vanilla extract
- 3 tbsp blueberries fresh or frozen
Instructions
- Pre-heat your oven to 180C / 356F / gas mark 4
- Place all of the ingredients except the blueberries into a blender and blitz until smooth.
- Stir in the blueberries.
- Grease four small ramekins or a baking dish.
- Spoon in the oat mix and bake in the centre of the oven for 15 – 20 minutes until golden on top.

These vegan blueberry baked oats can be a decadent breakfast or a delicious, healthier dessert due to the cake-like texture.
I like to serve mine with a dollop of vegan coconut yogurt in the morning or a scoop of vanilla ice cream if I’m serving them for pudding.
Either way I think they are best served warm.
