Make ahead

When I wake up in the morning the last thing I want to do is make breakfast. I am not a morning person.

Despite not wanting to go anywhere near the kitchen I know that breakfast is the most important meal of the day and that I will regret not eating something first thing.

The good news is that overnight oats are a fantastic breakfast dish that can be made in advance meaning all you have to do when you wake up is grab them from the fridge and eat!

Overnight oats get their name from the fact that they are made the night before.

A breakfast to go

I like to make my overnight oats in jars so that I can just pick them up out of the fridge and head to work. They are the perfect breakfast to go.

How to make overnight oats

To make overnight oats you have to follow just a handful of very simple steps.

You simply add the oats, chia seeds and plant based milk to a jar and give it a good stir up. Pop them in the fridge overnight and the oats soak up all of the milk.

What makes this particular overnight oats recipe super creamy is that we stir through some coconut yogurt. They're then topped with fresh passion fruit pulp for a burst of flavour!

Ingredients
  

  • 50 grams oats
  • 1 teaspoon chia seeds
  • 100 ml coconut milk
  • 1 pinch salt
  • 2 tablespoon coconut yogurt
  • 4 passion fruit pulp only

Instructions
 

  • The night before, place the oats, chia seeds, coconut milk and the salt in a bowl.
  • Cover and leave the oats and chia seeds to soak up the milk.
  • In the morning, loosen the oats with the coconut yogurt.
  • Serve with the passion fruit pulp - I like to layer mine in a jar to take to the office.
