The humble oat
Oats are a type of cereal grain. And did you know they are gluten free? They are also packed full of vitamins, minerals, fibre, and antioxidants.
When you buy oats in the supermarket they come in a variety of forms.
First you have oat groats or jumbo oats, these are whole oats and take a long time to cook.
Next are rolled or steel-cut oats. These have been crushed making them quicker to cook.
Instant oats or oatmeal cook incredibly fast but have more gloopy texture as you lose the bite of the oats.
How to bake oats
You’re probably more familiar with cooking oats on the hob, turning them into porridge, or leaving them to soak in the fridge to make overnight oats.
This recipe uses oats slightly differently, they are blended together with baking powder, a banana, maple syurp and plant milk. They are then baked to make a cakey, doughy texture.
This is what makes them feel like such a decadent breakfast, as they come out of the oven they’re just like warm cake or cookie dough.
Cookie dough flavours
To make the oats taste like cookie dough it is really quite simple. The ground up oats with vanilla already taste like the base of cookie dough. Adding chocolate chips is the finishing touch!
These vegan cookie dough baked oats are best served warm, just like chocolate chip cookies!
The recipe
Vegan Cookie Dough Baked Oats
Equipment
- 1 Blender
Ingredients
- 150 g rolled oats
- 1 tsp baking powder
- 1 banana
- 1 tbsp maple syrup
- 300 ml plant milk
- 1 tsp vanilla extract
- 1 tbsp dark chocolate chips
Instructions
- Pre-heat your oven to 180C / 356F / gas mark 4
- Place all of the ingredients except the chocolate chips into a blender and blitz until smooth.
- Stir in the chocolate chips.
- Grease four small ramekins or a baking dish.
- Spoon in the oat mix and bake in the centre of the oven for 15 – 20 minutes until golden on top.
