Pasta salads
I am a huge fan of pasta salads as they are so filling but also good for you. They can be packed full of veggies, served with a creamy sauce or a classic salad dressing. The possibilities are endless.
In this recipe I combine Italian orzo with the flavours of Greece for a tasty lunch recipe.
It lasts really well so you can make a big batch and have it for lunch throughout the week.
How to make Vegan Greek Orzo Salad
What is orzo?
Orzo is a type of pasta. Its shape is similar to grains of barley which is where it gets its name.
Because it’s much smaller than other shapes of pasta it’s perfect for a pasta salad.
What other ingredients are in this Greek inspired orzo salad?
As well as orzo, this salad is packed full of veggies. Red onions, vine ripened tomatoes, cucumber and kalamata olives.
I love kalamata olives because as well as providing a beautiful pop of colour they also add some salty, earthiness to the dish.
This salad is dressed with a simple dressing made from olive oil, lemon and lots of oregano. You can use fresh oregano but dried works just as well.
The recipe
Vegan Greek Orzo Salad
Ingredients
- 100 grams orzo
- 0.5 red onion
- 0.5 red pepper
- 3 inch cucumber
- 8 cherry tomatoes
- 100 grams kalamata olives
- 2 tbsp olive oil
- 1 tbsp lemon juice
- 1 tsp dried oregano
- salt and pepper to taste
Instructions
- Cook the orzo according to the packet's instructions, usually 10 minutes.
- Drain the orzo and leave to cool.
- In the meantime finely dice the onions, red pepper and cucumber. Quarter the cherry tomatoes and halve the kalamata olives.
- Add the vegetables to the orzo and combine.
- Pour over the olive oil lemon juice and oregano and stir until all of the orzo and vegetables are coated.
- Season to taste.
