- 100 grams orzo
- 0.5 red onion
- 0.5 red pepper
- 3 inch cucumber
- 8 cherry tomatoes
- 100 grams kalamata olives
- 2 tablespoon olive oil
- 1 tablespoon lemon juice
- 1 teaspoon dried oregano
- salt and pepper to taste
Cook the orzo according to the packet's instructions, usually 10 minutes.
Drain the orzo and leave to cool.
In the meantime finely dice the onions, red pepper and cucumber. Quarter the cherry tomatoes and halve the kalamata olives.
Add the vegetables to the orzo and combine.
Pour over the olive oil lemon juice and oregano and stir until all of the orzo and vegetables are coated.
Season to taste.
