Traditional British Desserts

British cuisine doesn't always have the best reputation but one thing we do do well are rib sticking puddings.

Some of the best know British puddings are apple crumble, bread and butter pudding and trifle.

But the most traditional British puddings are steamed puddings.

These puddings are so traditional they've appeared multiple times on the Great British Bake Off and so they form a part of my mission to veganise those recipes that appear on the show.

What are steamed puddings?

Steamed puddings are, as they say in the title, steamed or sometimes even boiled.

The most well known steamed pudding is perhaps the Christmas pudding which is steamed over hot water for hours in a pudding basin wrapped in cloth or topped with tin foil to keep the steam in.

Some steamed puddings are savoury but today we're cooking a sweet steamed pudding that is topped with a golden syrup sauce.

The recipe

These Individual Vegan Golden Syrup Steamed Puddings are flavoured gently with lemon zest and ginger powder to complement the sweet, sticky syrup.

They are soft and bouncy and dripping with golden syrup.

Serve them after your Sunday lunch, a dinner party or just because!

Individual Vegan Golden Syrup Steamed Puddings

Vegan Steamed Syrup Puddings are a fluffy sponge topped with a golden syrup sauce. They are a classic British dessert.

Equipment

  • 4 dariole moulds
  • 1 baking dish large enough to hold all 4 dariole moulds

Ingredients
 
 

  • 4 tablespoon golden syrup
  • 100 g vegan butter softened
  • 100 g caster sugar
  • 10 tablespoon plant milk
  • 1 lemon zest only
  • 100 g self raising flour
  • 0.5 teaspoon ground ginger

Instructions
 

  • Pre-heat you oven to 180C / 350F / gas mark 4.
  • Grease 4 dariole moulds then cut out 4 small squares of baking paper and use them to line the base of the moulds. Grease the sides of the dariole moulds with a little butter.
  • Add 1 tablespoon of golden syrup to the bottom of each mould.
  • In a mixing bowl, beat together the butter and sugar.
  • Add half of the milk and continue to beat (it may curdle a little)
  • Fold in the lemon zest, self raising flour and ginger.
  • Stir through the remaining milk to loosen the mix.
  • Spoon the mix equally between the 4 moulds.
  • Place the 4 moulds into the baking dish then place this onto your centre oven shelf.
  • Carefully pour boiling water into the baking dish roughly 2cm up the side of the moulds.
  • Cover with foil and place into the centre of the oven and cook for 25 minutes or until a skewer comes out clean.
  • Leave to cool for 5 minutes before turning out directly on to the serving plate.

Notes

Top tip: place your oven dish complete with filled moulds on to your oven shelf before adding the boiling water. That way you don't risk getting water into the moulds when you move it.

Frequently asked questions

How do I stop my vegan steamed pudding from sticking?

The trick to stopping your pudding from sticking is to grease the pudding basin with lots of butter. To make sure the syrupy top doesn't stick, place a circle of baking paper at the bottom of the basin too.

How do I know my vegan steamed pudding is cooked?

You can test whether a steamed pudding is cooked the same way you would test if a cake is cooked - piercing the cake with a skewer or knife and checking it comes out clean.

Can I overcook my vegan steamed pudding? How will I know?

It's very difficult to over steam a pudding like this as steaming is such a gentle cooking method.

How do I get my vegan steamed pudding out of its mould?

Carefully run a knife or small spatula around the mould and gently turn it upside down onto the plate to release.
