Rhubarb Mimosa

This Rhubarb Mimosa is made using a rhubarb infused simple syrup. It's a fun twist on a classic brunch cocktail.

Sparkling cocktails

Is it even a celebration if you're not serving a sparkling cocktail? These sparkling drinks are full of fizz and flavour thanks to the combination of prosecco, cava or champagne that has been mixed with a fruit syrup or juice.

They often come in beautiful hues from orange to pink depending on the fruit that has been used to flavour them.

But what is the difference between these different cocktails and why is the Rhubarb Mimosa my new favourite?

What is a bellini?

A Bellini is made specifically with prosecco and peach purée. It was created originally in Venice! It's therefore a popular cocktail to serve for romantic occassions like breakfast in bed, bridal showers or at weddings.

What is a mimosa?

Unlike a bellini, a mimosa cocktail is made from champagne and citrus juice (usually orange juice but could be grapefruit for example). A bucks fizz is the British equivalent.

Whether you call it a mimosa or a bucks fizz it's a popular brunch cocktail.

Rhubarb may not be a citrus fruit but it has a similar tart flavour making it the perfect substitution.

How is a rhubarb mimosa made?

There are just two ingredients for a rhubarb mimosa, rhubarb simply syrup and champagne. As with any sparkling cocktail, always get the best quality sparkling wine that you can.

The rhubarb simple syrup you will probably have to make yourself.

How to make rhubarb simple syrup

Rhubarb simple syrup is a by product of poaching rhubarb. You add water, sugar and rhubarb to a pan, bring it to a boil then leave the rhubarb to cool in the water and sugar syrup. When you remove the poached rhubarb, what's left is your rhubarb simply syrup which is perfect for using in cocktails such as this.

How long will rhubarb simple syrup keep?

Rhubarb simple syrup lasts well in a bottle in the fridge for 1 – 2 weeks. Just be sure to sterilise the bottle first!

Ingredients
 
 

  • 750 ml champagne
  • 400 ml rhubarb simple syrup

Instructions
 

  • Put the rhubarb simple syrup in a Champagne flute (roughly ⅓ up the side of the glass) then slowly top with the Champagne.
  • Serve immediately.
