Gin cocktails
There are probably more gin based cocktails on this blog than any other alcohol. That’s right, I am a gin lover! In the corner of my kitchen we have a built in pantry. You’d think as a foodie I’d pile it high with store cupboard staples but no, it’s stacked high with gin.
There’s a gin for every mood, from sweet to spicy, floral and even savoury! But for this cocktail it has to be Hendricks!
A gimlet is traditionally made with just gin and lime. It’s a seriously potent mix but delicious. I’ve given it a summery twist swapping lime for apple juice and adding cucumber and mint as a garnish to give a really light, fresh flavour.
This is fast becoming one of my favourite cocktails, we grow our own apples and mint in the garden and I can always grab a cucumber or two from the veg patch on the roof terrace at work. There’s something super satisfying about making something with produce you’ve grown and nurtured yourself.

The recipe
If you’re not a huge gin fan then don’t panic – you can swap the gin for vodka. Just make sure its a good quality vodka with a crisp finish to keep this a light and breezy cocktail.
Also, a word of warning, this cocktail is strong. It’s traditionally served in a martini glass so that’s the level of potency we are talking. It’s also why its so important to pick a gin you love to drink. Hendrick’s works well as its complements the flavour of the cucumber but feel free to swap with your preferred brand.
Green Apple Gimlet
Ingredients
- 50 millilitres gin preferably Hendricks
- 75 millilitres apple juice
- 4 ice cubes
- 2 ribbons cucumber
- 1 slice green apple
- 1 sprig mint fresh
Instructions
- Place the gin, apple juice and ice cubes into a cocktail shaker and shake well until well combined and the drink is cool.
- Line your glass with ribbons of cucumber before pouring the cocktail into the glass.
- Top with a slice of green apple and a sprig of mint.

Ooh I’ve never heard of a gimlet! I’m not actually the biggest gin fan, but I adore apple juice, so I would definitely give this a try. So pretty too!
