Mashed potatoes are a classic British side dish often served with roasted meats or sausages. This recipe is a plant based alternative to mashed potatoes that will work alongside any vegan roast meat substitute or a vegan sausage or two!

These vegan mashed potatoes are fluffy and full of flavour thanks to the roasted garlic and chives. Vegan butter and plant-milk help to give them the velvety texture we all love.

Ingredients

You will need just 8 ingredients to make my Vegan Garlicky Mashed Potatoes with Chives. They are:

  • Potatoes
  • Garlic
  • Olive oil
  • Salt and pepper
  • Vegan butter
  • Plant-milk
  • Chives

Step-by-step Instructions

In just four simple steps you'll have the perfect fluffy mash.

  • Step 1: Drizzle the garlic with a little olive oil and roast in the oven until soft.

  • Step 2: In the meantime boil the potatoes until tender.

  • Step 3: Drain the potatoes then mash them with the garlic, vegan butter and plant milk until smooth.

  • Step 4: Serve hot with a sprinkling of chives.

Hint: drain the potatoes well to make sure you're not accidentally adding any water to the mash.

You'll need the following kitchen equipment

  • Chopping board
  • Knife
  • Vegetable peeler
  • Tinfoil
  • Saucepan
  • Colander
  • Potato masher
  • Spoon

Storage

You can make mashed potato ahead of time and store it in the fridge for a few days but be cautious you may need to add more vegan butter or plant milk to bring it back to the right consistency.

Top tip

To get the smoothest mash potato use a potato ricer instead of a potato masher. Potato ricers have much smaller holes forcing the potato through even finer than you get with a masher.

What potatoes are best for making mash?

Some of the best varieties for mashed potatoes are Russet, Maris Piper, King Edward and Yukon Golden.

Does it matter if I use spreadable or block vegan butter?

No, for this recipe either will work fine.

What's the best plant milk for this recipe?

I often use oat milk because of its neutral flavour. For this reason soy milk also works well. I avoid nut milks as find their nuttier, sweeter taste doesn't work so well with the garlic and chive.

  • 1 chopping board
  • 1 vegetable peeler

  • 1 saucepan
  • 1 colander
  • 1 potato masher
  • 1 spoon

Ingredients
  

  • 4 large potatoes
  • 4 cloves garlic
  • salt
  • cracked black pepper
  • 75 g vegan butter
  • 100 ml plant milk e.g. oat milk or soy milk
  • 1 tablespoon chives thinly sliced

Instructions
 

  • Pre-heat the oven to 200C / 400F / gas mark 6. Drizzle the garlic with oil and wrap in tinfoil. Bake until golden and soft for about 45 minutes then set aside.
  • While the garlic is cooking, add the potatoes to a saucepan and cook until tender.
  • Drain the potatoes then mash with the garlic, vegan butter and plant milk. Season with salt and pepper to taste.
  • Serve topped with the chives.
