Celebrate summer with this juicy Tomato, Peach and Basil Salad recipe that involves minimal prep but is big on flavour. Get the recipe below.

I love to make the most of seasonal produce and when summer is in full swing I like to use heirloom tomatoes as often as I can. To me they just taste like sunshine in the summer months.

Sweet peaches are perhaps a surprising pairing with tomatoes but they work perfectly together, particularly with the aromatic basil and a light drizzle of olive oil and balsamic vinegar.

Ready in just 10 minutes, this salad is perfect for light lunches, as a side dish or part of a larger spread at a BBQ.

Ingredients

To make this Tomato, Peach and Basil Salad you'll need just 7 ingredients.

  • Fresh peaches
  • Heirloom tomatoes
  • Fresh basil
  • Extra virgin olive oil
  • Balsamic vinegar
  • Salt and pepper

Step-by-step Instructions

  • Step 1: Cut the peaches and tomatoes into wedges and arrange on a plate or salad dish.

  • Step 2: Sprinkle basil leaves over the top of the salad along with the dressing and serve immediately.

Substitutions

If you don't have all of the ingredients then try some of these alternatives:

  • Fruit: Try nectarines, plums, or even mango for a similar sweetness.
  • Herbs: Substitute with fresh mint or rocket for a peppery twist.
  • Vinegar: Use lemon juice or a splash of red wine vinegar in place of balsamic vinegar.
  • Oil: Leave out the olive oil entirely or use a neutral oil.

Variations

  • Cheesy: Add vegan mozzarella or feta for a creamy element.
  • Nutty: Top with toasted nuts like pine nuts, almonds, or walnuts for crunch.
  • Leafy: to bulk it up as a light lunch salad add spinach or lettuce leaves.

Storage

Unfortunately this is not a recipe I recommend making ahead of time as the peaches might go soft and the basil is likely to wilt.

You want soft, ripe peaches for this recipe but not ones that are overripe and mushy. They should give slightly when squeezed but still hold their shape.

Ingredients
  

  • 2 peaches stone removed and cut into wedges
  • 4 tomatoes cut into wedges
  • 1 bunch basil leaves only
  • 2 teaspoon olive oil
  • 1 teaspoon balsamic vinegar
  • salt and pepper to taste

Instructions
 

  • Layer the peach and tomato wedges on a serving dish and sprinkle with torn basil.
  • Drizzle over the olive oil and balsamic and season with salt and pepper
  • Serve immediately.
