Vegan Brownies

Who doesn’t love a rich, decadent brownie? Made with bitter sweet chocolate they are the perfect snack or dessert.

I love this recipe because the texture of the brownie contrasts perfectly with the candy coated mini chocolate eggs.

They are best served warm (perhaps with a little squirty cream!) but they will taste good when they are cold too. They will store in an airtight container for a few days so you don’t have to eat them all at once. (Even if you’d like to!)

How to make Vegan Mini Egg Brownies

Making vegan brownies is easy. You can find my basic brownie recipe here. Today I’m making them Easter themed by adding vegan mini eggs to the batter. They’re a tried and tested recipe that won’t leave you disappointed.

One of the best things about this recipe is that it doesn’t rely on fancy substitutes like egg replacement powder. Instead, it uses ingredients you can easily buy in any supermarket,

You will need just 6 ingredients to make them: bananas, vegetable oil, caster sugar, plant milk of your choosing, self raising flour and cocoa powder.

Once you’ve got your indgredients the method couldn’t be simpler.

  • Mash the bananas in a large bowl using a fork.
  • Next add in the sugar, oil, milk and mix well.
  • Sift the flour and cocoa powder into the bowl and again, mix well.
  • Once you’ve made the batter stir through 2/3rds of the chopped vegan mini eggs.
  • Pour the batter into your lined tin and make sure it is level.
  • Sprinkle over the remaining mini eggs.
  • Bake in the centre of the oven for 25 minutes or until the brownies are springy to the touch.
  • Let the brownies cool before cutting into 9 equal pieces.

All that’s left to do then is to eat them!

Where can I buy vegan mini eggs?

There are a couple of brands on the market. In my opinion the best are Doisy & Dam and Mummy Meegz. Doisy & Dam are more like dark chocolate and Mummy Meegz are more like milk chocolate inside.

I believe Doisy & Dam are now sold in Holland and Barrett stores nationwide (UK). You can also buy them both online of course!

Equipment

  • Large bowl
  • 9 x 9 inch tin

Ingredients
  

  • 2 bananas ripe
  • 4 tbsp sunflower oil or other unflavoured oil
  • 175 grams light brown sugar
  • 4 tbsp soy milk or other non dairy milk
  • 100 grams self raising flour sifted
  • 4 tbsp cocoa powder sifted
  • 100 grams vegan mini eggs roughly chopped

Instructions
 

  • Preheat your oven to 180C / 350F / gas 4 and line a 23 X 23 cm (9 inch by 9 inch) cake tin / brownie pan with grease proof paper.
  • Mash the bananas in a large bowl using a fork.
  • Next add in the sugar, oil, milk and mix well.
  • Sift the flour and cocoa powder into the bowl and mix well.
  • Add 2/3rds of the chopped mini eggs to the batter and stir through.
  • Pour the batter into your lined tin and make sure it is level.
