Sometimes you need to take the humble toast to the next level. I like to do this by adding extra special cooked toppings and using different types of bread.

How to make this simple breakfast dish

Making these Vegan Creamy Mushroom and Spinach English Muffins is easy. The mushrooms and spinach are sauteed with a little garlic before having vegan crème fraîche stirred through. the whole dish is seasoned with a lot of cracked black pepper and chopped parsley.

Before we dive into the recipe let's look at some of the key components of the dish.

What is an English Muffin?

An English Muffin is a type of round bread. You might see them called breakfast muffins or toasting mushrooms.

If you can't get hold of English muffins you could just use toast. Sourdough toast would be particularly nice.

Which mushrooms work best?

I like to use a mixture of mushrooms. Oyster, shitake and chestnut mushrooms are my favourite. But, you could use any mushroom, including white button mushrooms. The choice is yours.

Where can I find vegan crème fraîche?

My go to brand of vegan crème fraîche is Oatly. You can buy this in most supermarkets across the UK. Bonsan almond creme is another great alternative. If you can't get hold of either of these then replace it for a mild, vegan cream cheese.

Do I have to use fresh parsley?

My preferred herb for this recipe is fresh parsley. But, you can swap this out for fresh tarragon if you like. Dried herbs will also work in a pinch.
