These Avocado and Black Bean Bowls are inspired by the flavours of Mexico. With just 8 ingredients you can make a vibrant salad bowl perfect for lunch.

Easy salad bowl recipes

I didn't know what to call this recipe or how to describe it really. It's a simple salad that totals just 5 core ingredients, 8 if you count the seasonings/dressing. The salad ingredients are all tossed together with a little olive oil and lemon juice to coat it. It doesn't get easier than that.

To make this recipe all you'll need are:

  • Black beans
  • Sweetcorn
  • Cherry tomatoes
  • Avocado
  • Jalapenos
  • Lemon juice
  • Olive oil
  • Coriander

The ingredients are inspired by those you might find in other Mexican dishes but they are mixed together to be served as a salad bowl for a quick and easy lunch.

I like "bowl" recipes like these as they are perfect for transporting to school/work in a lunchbox.

Make ahead

This Mexican Inspired Avocado and Black Bean Bowl is great for a number of reasons. First, lots of the ingredients come out of tins (black beans and sweetcorn) or jars (jalapenos) making it quite a cheap meal whilst still being nutritious. That's right, even though it's tinned the sweetcorn in this recipe still has very similar nutritional benefits that fresh sweetcorn does. Win-win right?

The other reason why I love this recipe is because it's perfect for making ahead. I'll mix up a big batch (minus the avocado and coriander) and keep it in the fridge for up to 3 days. I then spoon some into my lunch each morning, top with fresh avocado and coriander and it's good to go!

It's the perfect make ahead lunch recipe.

Ingredients
  

  • 235 g black beans drained weight from a 400g tin
  • 260 g sweetcorn drained weight from a tin
  • 14 cherry tomatoes quartered
  • 10 pickled jalapenos from a jar
  • 1 avocado cut into cubes
  • 4 tablespoon olive oil
  • 1 lemon juice only
  • fresh coriander leaves only

Instructions
 

  • Combine all of the ingredients in a bowl and toss.
  • Serve immediately (or see instructions to make ahead).
