Meixan red table sauce
Salsa Roja translates to “red sauce”. It’s a really versatile salsa that can be used in a wide range of circumstances (including my favourite, on tacos).
It is considered a “table sauce” as it’s used almost like a condiment.
Making this salsa couldn’t be easier. Cooked onions, tomatoes, garlic and chillies are blitzed together with fresh coriander and a pinch of salt.
You can sieve the sauce to get it super smooth but I quite like it with a little texture. Either way it’s less of a chunky, chopped salsa and more of a sauce, hence the name.
Do I need any specialist ingredients?
The main bulk of this recipe you’ll easily be able to find in your local super market. Onion, tomato, garlic and fresh coriander aren’t hard to come by. But, this recipe also calls for guajillo chillies.
These chilli peppers are mild – medium in heat terms so this salsa won’t blow your head off. You can find them dried in specialist food stores or online. Buying them dried is ideal as they last longer and you can re-hydrate them as required.
If you can’t get hold of guajillo chillies then you could substitute them with ancho chillies, pasilla negro chillies or even puya chillies. They all have a similar flavour though are slightly different in terms of heat level.

Equipment
- 1 high speed blender
Ingredients
- 1 onion quartered
- 4 tomatoes quartered
- 5 cloves garlic
- 3 guajillo chillies dried, stems removed
- 200 ml vegetable stock
- 1 small bunch fresh coriander
- 1 pinch salt
Instructions
- Boil the onion, tomatoes, garic and guajillo chillies in the vegetable stock for 15 minutes.
- Leave to cool before adding to your blender with the remaining ingredients.
- Blitz on high until smooth. (Sieve if desired to get even smoother).
