This Raspberry and Apple Bircher is made with just 3 ingredients: oats, apples and raspberries. 3 ingredients that are perfect for a healthy, balanced diet. The fruits are packed full of nutrients and the oats, when soaked overnight, break down making them easier to digest.

What’s not to love? 

Is bircher the same as overnight oats?

If you’re familiar with the concept of overnight oats you might be wondering why bircher has a different name.

Bircher is, in some ways, the original overnight oats. It was developed by a doctor back in the early 1900s and has grown in popularity ever since.

While overnight oats are made with dairy (or vegan substitutes in our case), bircher is made with the pulp and/or juice of fruit.

One of the other main similarities is that they are made the night (or days) before so that they are reading for you in the morning. They are the perfect make ahead recipe.

How to make bircher

To make bircher you can use oats or muesli. I prefer oats and that’s what I’ve used in this recipe but it’s entirely up to you. This recipe calls for rolled oats as they are really good at soaking up the juice of the apple. Other oats like quick oats or oatmeal will result in a much more liquid, gooey bircher.

The oats (or muesli) Are then combined with fruit juice or pulp and left overnight. I like to make my apple and raspberry bircher with grated apples as this gives a great texture as well as creating lots of juice. You can choose any variety of apple but I like Royal Gala apples as they are both sweet and juicy. Other varieties that work well are Honeycrisp apples and Red Delicious apples.

Whichever apple you choose, make sure it’s an eating apple and not a cooking apple.

Bircher can be topped with any fruit. Blackberries, blueberries, mango and more. I like to use raspberries as they burst with flavour in every bite!

Ingredients
  

  • 400 grams apples roughly 4 apples
  • 150 grams rolled oats
  • 2 handfuls raspberries frozen or fresh

Instructions
 

  • Grate all of the apples (including the skin) until all that is left is the core (which should be discarded).
  • Stir together the grated apple and rolled oats in a bowl until they are well combined.
  • Transfer to two bowls or glasses and leave overnight.
  • In the morning serve with the raspberries.

How long will my bircher last?

The best thing about this Raspberry and Apple Bircher is that it is made in advance so you don’t need to put in any effort first thing in the morning. But best of all, you can make a large batch and keep it in the fridge for up to 3 days.
