When summer comes around a lot of people worry about how to cater for vegans on the BBQ. But this doesn't need to be half as stressful as people make it.

Sure, there are plenty of vegan burger and sausages on the market but you can also do a lot with vegetables which are way more nutritious and way more tasty!

Mushrooms have a fantastic, meaty quality to them which makes them perfect for adding to a BBQ.

How to make BBQ King Oyster Mushroom Kebabs

Mushrooms as a meat substitute

Mushrooms are a very popular meat sustitute and for good reason. Although mushrooms aren’t as high in protein as some of the other meat substitutes, they are a rich, low calorie source of fibre and other important vitamins, minerals and antioxidants.

Certain varieties have a really meaty texture when cooked - including king oyster mushrooms which we use for this recipe. They also take on flavour really well which is why they are perfect for soaking in a marinade or covering with a rich glaze.

A meaty, BBQ glaze

The real start of this recipe is the marinade or glaze. It's what really makes them a fantastic alternative to meat on the grill.

These BBQ King Oyster Mushroom Kebabs are marinated in balsamic vinegar, red miso paste, garlic paste, soy sauce and sugar. This creates a wonderful glaze packed full of umami flavour. You wouldn't know that you're not eating meat!

Cooking kebabs on the BBQ

You've fired up the grill, now what?

Add the mushroom kebabs to a BBQ grill over a medium heat. Cook for 5 minutes on each side until they are golden on both sides with slightly crispy edges and charred grilled marks.

Had to call off the BBQ due to rain? Don't worry, these kebabs can be cooked on the hob too.

Simply heat a small amount of oil in a grill / griddle pan on medium heat and add the mushrooms flat side down. (You may need to do this without skewering them first depending on the size of your pan).

Cook for 5 minutes then flip. They are ready once they are golden with slightly crispy edges.

These BBQ King Oyster Mushrooms are a fantastic meat alternative for adding to the grill. They are perfect for vegans or vegetarians alike.

Ingredients
 
 

  • 8 king oyster mushrooms
  • 300 ml balsamic vinegar
  • 150 ml soy sauce
  • 2.5 tablespoon red miso
  • 2 tablespoon ginger paste
  • 1 tablespoon caster sugar
  • 1 sprig rosemary finely chopped

Instructions
 

  • Begin by cutting the king oyster mushrooms in half length-ways and place to one side.
  • Mix up the marinade with the remaining ingredients ensuring the miso and garlic paste are well incorporated. Taste and adjust as required.
  • Dip the mushrooms into the marinade and leave for a minimum of 30 minutes or a maximum of overnight.
  • Once marinaded, add to bamboo or metal skewers.
  • Add the mushroom kebabs to a BBQ grill over a medium heat.
  • Cook for 5 minutes on each side until they are golden on both sides with slightly crispy edges and charred grilled marks.
  • Serve while hot.
