It’s natural in summer to crave something cool and I certainly adjust what I’m eating as the temperature climbs. 

Salads are always popular but I think there’s one salad type that’s often overlooked: the fruit salad. I, and I’m sure many of you, think of fruit salads as something a little outdated. Or, something that comes pre-prepared in the supermarket and is of pretty low quality. But, hopefully with this recipe I’ll be able to show you that summer fruits work incredibly well in a sweet yet refreshing fruit salad, complete with a yogurt dressing. It’s a fab alternative to richer summer puds like ice cream! (Though who doesn’t love a scoop or two of ice cream…)

One of my favourite things about this salad is that it makes the most of summer produce. Strawberries, raspberries, nectarines are all in season between May and September (sometimes longer) in the UK making them the perfect base for the salad. Pineapple isn’t grown in the UK and so a little cheeky to include but it adds another dimension to the dish making it worthwhile to include.

Whilst some fruits like strawberries taste their best at room temperature, I like to serve this salad fridge cold.

What’s a salad without a dressing? This yogurt dressing adds another dimension to the salad not only in terms of flavour but also texture. 

As I’m vegan I use a coconut based yogurt but soy would work too. Just make sure you’re picking up a greek style or natural yogurt as you don’t want artificial flavours or it to be too sweet. A splash of lime juice makes sure the dressing is the right amount of tart, balancing out the sweetness of the summer fruit.

I also really love the creamy texture of the fruit which in contrast has a little bit of bite.

Variations

Strawberries, raspberries, nectarines and pineapple form the basis of this summer fruit salad but there are many more fruits you could add or swap out. Here’s some inspiration:

  • Mango
  • Passion fruit
  • Blueberries
  • Orange

Ingredients
 
 

  • 0.5 pineapple skin and core removed
  • 3 nectarines
  • 175 grams strawberries
  • 125 grams raspberries
  • 120 ml coconut yogurt
  • 1 tsp lime juice
  • mint leaves to garnish

Instructions
 

  • Cut the pineapple and nectarines into pieces roughly 1.5 cm in size.
  • Halve or quarter the strawberries so they are a similar size to the pineapple / nectarines.
  • Add the pineapple, nectarines and strawberry pieces to a bowl along with the raspberries left whole.
  • Carefully toss the fruit together trying not to break up the raspberries.
  • Add to a platter or bowl.
  • Next mix the lime juice with the coconut yogurt before drizzling over the top of the fruit.
  • Serve with a few mint leaves for garnish.
