Vegan Sweetcorn Fritters

These vegan sweetcorn fritters are sweet and spicy. They taste great with a vegan chipotle aioli or pickled red onion. Get the recipe below.

How to make vegan sweetcorn fritters

Making fritters is simple. You take your vegetables (in this case sweetcorn and spring onion) and bind them together with a batter which is seasoned or spiced. You then shallow fry them until they are cooked in the middle and crispy on the outside. Simple!

Which type of corn should I use?

The good news about these vegan sweetcorn fritters is that they can be made with both canned and fresh sweetcorn.

Got fresh corn that's going to waste? Then why not make fritters! Have a tin of sweetcorn lurking at the back of your cupboard? Then a plate of fritters would make a perfect snack.

You can even make them with frozen sweetcorn that has been thawed.

The only thing to bear in mind is that frozen sweetcorn and canned sweetcorn can be quite wet. So, pat them down with some kitchen roll before using.

What binds the fritters together?

I mentioned that fritters need a batter to bind the vegetables together. In conventional cooking this would be a batter made from egg and flour. Of course this being a vegan recipe we need to do without the egg.

There are a couple of egg alternatives you could use (like flaxseed) but my favourite way to bind these fritters together is with a mix of water and chickpea flour. You may know of chickpea flour by its other name, gram flour.

The reason I like making these fritters with chickpea flour is the nutty flavour it gives. It also makes for a really crisp outside when the fritters fry. But best of all I always have a bag of it in my cupboard.

If it isn't part of your pantry I recommend adding it.

Bringing it all together

Once you've got your corn and added some thinly sliced some spring onions, you need to make a batter with the chickpea flour and water along with the seasoning and spice. Mix the corn and spring onions into the batter.

All that's left to do is heat some oil in a frying pan and cook the fritters. Once the oil is hot, spoon 2-3 tablespoons on the mix directly into the hot oil to form a small circular patty shape. Repeat this with the rest of the batter trying not to crowd the pan. You will need to cook these in batches.

Once cooked leave them to cool. It may be tempting to dive right in but they will benefit from being allowed to cool just a little.

Ingredients
 
 

  • 100 g chickpea flour
  • 1 pinch salt
  • 1 pinch ground black pepper
  • 1 teaspoon coriander
  • ½ teaspoon cumin
  • ½ teaspoon chilli
  • 100 ml water
  • 400 g sweetcorn
  • 5 spring onions
  • Vegetable oil to fry
  • Coriander to garnish

Instructions
 

  • In a bowl, mix together the chickpea flour, salt, pepper and spices.
  • Mix well to ensure all of the spices are evenly distributed.
  • Make a well in the middle and slowly pour in the water while stirring to ensure you have a thick, smooth batter.
  • Add the sweetcorn kernels and sliced spring onions and mix well.
  • In a frying pan, heat enough oil to cover the bottom of the pan.
  • Add about 2 tablespoon of the mixture to the pan at a time. You may be able to cook up to 4 fritters at a time depending on the size of your pan.
  • Cook for 2 minutes or until golden brown then flip and cook for a further 2 minutes.
  • Repeat until all of the mixture has been used.
  • Garnish with fresh coriander.

Serve with...

For a simple snack I like to serve these fritters with a dip of spicy chipotle aioli or a lighter, brighter yogurt based dip. I take coconut yogurt and mix with the juice of half a lime then season with a pinch of salt and pepper. It's so simple but is the perfect accompaniment.

I always have a pot of pickled red onion in the fridge and I like to add these too just for some extra zing.

You could also serve these are part of a main meal with Vegan KFC or Vegan Pulled Pork.
