Coconut and pineapple go so well together. It’s a classic flavour pairing that often reminds us of sandy white beaches and the warm sun. I hope when you try this delicious cocktail you too will be transported to somewhere sunny and relaxing.
I think the reason why coconut and pineapple go so well together is because the sweet and sour elements bounce off of one another. Coconut is sweet and nutty, with a hint of vanilla and the texture is creamy and smooth. Pineapple is almost a complete contrast with it’s zesty, juicy flesh. Bend them together and you get a perfectly balanced drink.
A squeeze of lime juice and a generous helping of shaved ice lifts the drink and take some of the sharpness and burn out of the alcohol. It’s ideal for cooling off in the summer.

What is coconut rum?
The coconut flavour in this cocktail comes not from fresh coconut or coconut water, but from coconut rum. The brand I used is Aluna Coconut Rum. It’s an all-natural rum, made with premium rums from Guatemala and the Caribbean, toasted coconut and pure, sustainably sourced coconut water. It is the perfect balance of toasted coconut and sweet rum!
Lots of coconut rum on the market isn’t actual coconut rum – it’s a coconut liquer that is really high in sugar. If you can’t get your hands on Aluna Coconut Rum then make sure to look at the ingredients list to check what you’re buying isn’t going to be artificially sweet.
If you’re looking for something more mainstream that you will easily be able to find in the supermarket then Malibu is probably your best best. Bacardi also sell a coconut-flavored rum but the coconut flavour isn’t all that strong. Koko Kanu is a Jamaican Coconut Rum that would be a great substitute for Aluna. Another delicious option is Dead Man’s Fingers coconut rum.
I was given Aluna Coconut Rum as a gift though I was under no obligation to give it a mention or a good review! And it’s now a regular feature in my alcohol cabinet.
How to make an alcoholic slushy
Making this Coconut Rum and Pineapple Slushy couldn’t be easier. You just need the coconut rum of your choosing, pineapple juice, lime juice, and lots of ice! I’m sure if you had a slushy machine then you could make it in there. But, you don’t need any expert kit, a blender will do just fine.
Once you’ve assembled your ingredients and your blender you just need to pulse until you’ve got your desired consistency. It’s that easy! Pulsing is a better ideas then running it on low because I find I often stop the machine too late and it’s a little bit too smooth for my liking.

The recipe
Coconut Rum and Pineapple Slushy
Ingredients
- 50 ml coconut rum
- 150 ml pineapple juice
- 0.5 lime juice only
- 1.5 cup ice
Instructions
- Add all of the ingredients to a blender and pulse until you have the desired slushy consistency.
- Serve with a wheel of lime to garnish.
