Breakfast Smoothies
This Blueberry, Banana and Coconut Smoothie recipe is inspired by a breakfast smoothie made with oats and yogurt that we used to enjoy back at uni from the smoothie bar that opened on campus. That’s a distant memory now!
Now that I’m trying to be healthier I thought I would get the blender out again and start whipping up smoothies for our breakfasts. It’s a great way of getting more fruit into your diet. After a couple of weeks drinking smoothies in place of my usual pastries, I found myself feeling a lot more energetic in the morning.
How to make a Blueberry, Banana and Coconut Smoothie
I wanted to start with that same yogurt and oat base that the smoothie bar used all those years ago.
For this recipe we use coconut yogurt. Lots of vegan yogurts are fortified with calcium which is so important to have in your diet. Coconut yogurt is also fantastic for your digestive health due to the probiotics.
As well as the coconut yogurt I also add a few splashes of coconut water not only for that tropical taste, but to improve the consistency of the drink.
Bananas are included for the many varied nutrients and vitamins contained within, not to mention the fantastic silky texture they add to the drink.
Finally, blueberries provide sweetness as well as fibre, potassium, folate, vitamin C and vitamin B6.
A whizz up in a good blender will produce a delicious, creamy smoothie full of goodness which will help keep you full until lunchtime.
If you prefer your smoothies a little thicker then simply add more yogurt. If you prefer them thin, like I do, then add a splash or two more of coconut water. It’s up to you! If you find yourself with a bunch of incredibly sour blueberries (like I often have) a spoon of maple syrup will help sweeten up the drink.

Blueberry, Banana and Coconut Smoothie
Ingredients
- 100 ml coconut water
- 100 ml coconut yogurt
- 2 bananas sliced
- 150 g blueberries fresh or frozen
- 4 tbsp rolled oats
Instructions
- Pour the coconut water and natural yogurt into your blender.
- Next add the sliced bananas, blueberries and rolled oats.
- Blitz the mix on high until smooth.
- Pour into the glasses and enjoy.

ooh this looks like a gorgeous little breakfast smoothie to kickstart the day! I love blueberries and have been blitzing frozen ones up with melon, spinach and cucumber for a healthy start. Smoothies are amazing.

Thanks Helen. If you left out the banana I’d just up the number of blueberries. It would be more thin but that’s not necessarily a bad thing! 🙂
