Looking for an easy, healthy dessert that's naturally sweet and completely dairy-free? This Vegan Banana and Coconut Ice Cream is the perfect solution. Made with only ripe bananas and rich coconut cream, this homemade ice cream is incredibly creamy, satisfying, and packed with tropical flavour.

For a while "nice cream" became popular. It involved simply freezing bananas and blending them. But I always felt something was missing. It was nice, as the title suggested, but missing that richness of regular ice cream. That's why I add coconut cream.

One of the best things about this vegan ice cream recipe is how simple it is to make. With no refined sugar, no ice cream maker, and just two basic ingredients, it's the perfect summer treat for anyone following a vegan lifestyle or who is looking for a dairy-free treat.

Ingredients

You're going to need just 2 ingredients for this recipe, ripe bananas and coconut cream. That's it! Couldn't be easier right?

Step-by-step instructions

  • Step 1: slice your bananas and freeze until hard.

  • Step 2: add the frozen bananas to a blender with the coconut cream and blitz until smooth and creamy.

  • Step 3: spoon the ice cream mix into a container, cover with a lid and freeze until set firm.

  • Step 4: serve with vegan waffle cones or as part of an ice cream sundae with your favourite toppings!

Hint: Use very ripe bananas with plenty of brown spots. They provide natural sweetness and create the creamiest texture.

This also makes it a fantastic alternative to baking banana bread in the summer months when you have a bunch of forgotten about bananas that need turning into something delicious.

Substitutions

With just 2 ingredients you can't really make substitutions to this recipe.A t a push, you could use the thick cream from the top of a chilled can of full-fat coconut milk if coconut cream isn't available.

Equipment

You'll spot there's no need for an ice cream machine with this no-churn ice cream recipe but you will need the following kit:

  • Sharp knife
  • Chopping board
  • Ziploc bag
  • High-speed blender or food processor
  • Freezer-safe container
  • Ice cream scoop

One thing to keep an eye out for is that some high speed blenders, like my Vitamix, have a setting for frozen items. This runs the blades at a speed that stops the ingredients getting hot and melting whilst still blending them to a smooth creamy texture.

Storage

Store the Vegan Banana Ice Cream in an airtight freezer-safe container for up to 1 month.

If frozen solid, allow it to sit at room temperature for 10-15 minutes before scooping.

Top tip

Freeze your banana slices in a single layer before blending. This prevents them from clumping and ensures a silky-smooth ice cream texture.

Can I make this ice cream without an ice cream maker?

Yes! This recipe doesn't require an ice cream maker. A blender or food processor is all you need.

Why should I use ripe bananas?

Does this ice cream taste strongly of coocnut?

Ingredients
  

  • 4 large bananas peeled and sliced
  • 240 ml coconut cream

Instructions
 

  • Place the sliced ripe bananas in a single layer on a baking tray or plate lined with baking paper. Freeze for at least 3-4 hours, or until completely frozen.
  • Transfer the frozen banana slices to a high-speed blender or food processor. Add the coconut cream and blend until completely smooth and creamy, scraping down the sides as needed.
  • Serve immediately as soft-serve ice cream, or transfer the mixture to a freezer-safe container and freeze for 2-3 hours for a firmer, scoopable texture.
