Vegan Blood Orange Loaf Cake

This zesty Vegan Blood Orange Loaf Cake is the perfect seasonal bake. It brightens up the cold winter months with the floral flavour of the blood orange. Get the recipe below.

Vegan cake

I love vegan baking. And a huge proportion of recipes on this site and cake, cookies, pastries and bread. Hopefully this vegan cake recipe won't dissappoint.

Today we're making a Blood Orange Loaf Cake. Both the cake and icing are flavoured with blood orange and the decoration is edible too - simple slices of fresh blood orange.

To get the flavour in the cake we use blood orange juice as well as the zest which I think is the most important. This is because the zest is full of natural oil that have a tonne of flavour.

The icing is simply icing sugar and blood orange juice.

How to make a vegan loaf cake

Some people have the impression that vegan baking is difficult as a result of all of the different substitutes. But this recipe doesn't rely on anything complicated like egg replacement powders or specialist ingredients. Instead we use ingredients you can easily buy in any supermarket.

There are two parts to making the batter for this vegan loaf cake - the wet ingredients and the dry ingredients. These are weighed out separately and then combined to make a smooth batter before pouring it into a lined loaf tin.

The wet ingredients are made up of:

  • Soy milk
  • Soy based vegan yogurt
  • Oil
  • Sugar
  • Vanilla paste
  • Blood orange juice and zest

These are whisked together so that they are a smooth liquid.

The dry ingredients are:

  • Self raising flour
  • Baking powder

We use both self raising flour and baking powder to make sure it has plenty of lift.

To combine the wet and dry ingredients, make a well in the middle of the dry ingredients then slowly pour in the wet ingredients whisking as you go to avoid any lumps. As soon as you have a smooth batter pour it into your lined loaf tin and bake.

How to decorate your Blood Orange Loaf Cake

Once cooked, ice your cake with an orangy glaze.

To make the glaze you need icing sugar and blood orange juice. Simply whisk together until smooth, then spoon over the top of the cake. It will drip down the sides in a very satisfying way.

To finish it off and to nod to the fact that this is a blood orange cake, layer thin slices of blood orange on top of each other across the top of the cake.

Equipment

  • 1 Loaf tin
  • baking paper

Ingredients
  

  • 125 ml vegan soy yogurt or similar vegan yogurt
  • 175 ml soy milk or another plat milk
  • 150 g caster sugar
  • 0.5 teaspoon vanilla paste
  • 3 tablespoon vegetable oil
  • 3 tablespoon blood orange juice roughly half a blood orange
  • Zest of a blood orange
  • 250 g self raising flour
  • 0.5 teaspoon baking powder
  • 0.25 teaspoon salt
  • 6 tablespoon icing sugar
  • 3 tablespoon blood orange juice roughly half a blood orange
  • 6 blood orange slices

Instructions
 

  • Preheat the oven to 180 C / 356 F / gas mark 4.
  • Line a loaf tin with baking paper.
  • Add the yogurt, milk, caster sugar, vanilla paste, vegetable oil, blood orange juice and blood orange zest to a jug and whisk well.
  • In a bowl, whisk together the self raising flour and baking powder.
  • Create a well in the middle of the flour and then slowly pour in the wet ingredients while whisking until you had a smooth batter.
  • Pour the batter into the lined loaf tin.
  • Bake for 50 to 60 minutes or until a skewer comes out clean.
  • Cool for 10 minutes before removing from the loaf tin.
  • Cool completely before whisking together the icing sugar and blood orange juice and drizzling it over the top.
