What I love about Vegan Cream Cheese and Avocado Bagels is just how versatile they are. The chewy bread is the perfect vehicle for a wide range of different toppings.

For those who don’t follow a plant based diet, salt beef or smoked salmon are popular choices. But, there are lots of vegan bagel toppings that will make the perfect breakfast, brunch or lunch.

For this bagel recipe, I load up a sesame bagel with a garlic and herb cream cheese, sliced avocado, cucumber, tomatoes, pickled red onion and alfalfa sprouts!

It may sound like a lot of toppings and they do get piled up high but each flavour adds something new and exciting to the dish with plenty of interesting textures.

It’s probably fair to say this is one dish you will want to eat with a knife and fork!

Vegan Cream Cheese and Avocado Bagels

In this recipe sesame bagels are topped with vegan cream cheese, avocado, cucumber, tomatoes, pickled red onion and alfalfa sprouts!

Ingredients
  

  • 2 sesame bagels
  • 4 tbsp vegan cream cheese garlic and herb flavour
  • 2 large avocados thinly sliced
  • 2 inch cucumber thinly sliced
  • 6 cherry tomatoes sliced
  • 4 tbsp pickled red onion slices
  • 4 tbsp alfalfa sprouts

Instructions
 

  • Begin by cutting your bagels in half and toasting them for 2 minutes or until just warm and crisp.
  • Spread with the cream cheese.
  • Next top with the vegetables, starting with the sliced avocado, cucumber and tomatoes.
  • Spoon over some pickled red onion slices and top off with the alfalfa sprouts before serving.
