I love foraging my own food and one of the easiest foods to forage is the humble blackberry. They are so easy to come by all over the UK. And, because they are easy to identify they are great for those who are just beginning to forage.

When are blackberries in season?

If you want to forage your own blackberries for this recipe then you will want to start to keep an eye out for wild blackberries from August. They will be in season until October time.

Where can you forage blackberries?

Blackberries are usually found in hedgerows and in woodland areas in the UK.

What is a blackberry fool?

One of my favourite ways to use up blackberries is in desserts like this simple blackberry fool.

How do you make a vegan blackberry fool?

To make a blackberry fool vegan all you need to do is to use vegan double “cream”. Elmlea is my favourite brand but Oatly also do a vegan whipping cream which is perfect for this recipe.

The first step is to make a blackberry syrup by heating them until they break down. Leave it to cool before moving on.

All you need to do then is whisk up your vegan cream, icing sugar and vanilla extract. Then spoon in your blackberry syrup and top with any extra blackberries.

Ingredients
  

  • 200 g blackberries fresh or frozen
  • 0.5 lemon juice and zest
  • 3 tbsp caster sugar
  • 250 ml vegan double cream
  • 3 tbsp icing sugar
  • 0.5 tsp vanilla paste

Instructions
 

  • Add the blackberries (except 2 or 3 for garnish), lemon juice and caster sugar to a saucepan and heat over a medium heat.
  • Bring to a simmer and cook for 15 minutes until the blackberries have broken down and formed a syrup.
  • Leave to cool.
  • In the meantime, whisk the vegan cream and icing sugar until it has formed stiff peaks.
  • Layer the blackberry syrup and whipped cream in glasses or dessert dishes.
  • Top with the remaining blackberries and lemon zest.
