Beans for a plant based diet
You might be thinking I’ve gone mad sharing another bean recipe but there are so many benefits to including beans regularly in a plant based diet.
Benefits include:
- Getting lots of plant based protein
- Lots of fibre
- Good source of iron
- Good source of magnesium
- Full of potassium
- Lots of zinc
- Good source of folate
In other words they’re full of nutrients! And, did you know you get all of the benefits even when you use tinned beans.
Turning beans into a delicious meal
Beans don’t have to be boring. They are incredibly versatile and can be added to soups, stews or enjoyed on their own – just like in this recipe.
I like to think of these creamy mushrooms cannellini beans as a sort of bean risotto.
The mushrooms are sauteed along with onions and garlic before the beans are added. Nutritional yeast, dried herbs and plenty of cracked black pepper add flavour. Plant based cream is then added to bring it together in a smooth silky sauce.
Serve it alone or with garlic bread (my favourite way to eat it!)

Can I swap cannellini beans for another type of bean?
Yes. you can switch cannellini beans for another type of bean. I’d recommend sticking with white beans so why not try butter beans instead.
What type of mushrooms should I use?
The recipe calls for “mixed mushrooms” purely because I like to include a variety for flavour and texture. My local supermarket does a mix made up of oyster mushrooms and shitake mushrooms. I like to add chestnut mushrooms to this mix.
You can use any type of mushrooms, and just a single variety if that’s all you have. The one mushrooms I’d avoid using is just the regular old white mushroom. These have the least flavour and so don’t add a huge amount to the finished dish.
Where can I buy plant based cream?
In the UK most supermarkets now stock plant based cream – though you may need to go to a larger branch rather than one of the little, express supermarket stores.
Common brands include Oatly and Elmlea. Both work well in this recipe
The recipe
Vegan Creamy Mushroom Cannellini Beans
Ingredients
- 1 tbsp olive oil
- 1 onion finely diced
- 3 cloves garlic minced
- 400 g mixed mushrooms sliced
- 235 g cannellini beans drained weight from a 400g tin
- 200 ml plant based cream
- 2 tbsp nutritional yeast
- 1 tsp dried mixed herbs
- black pepper
- 1 tbsp parsley chopped
Instructions
- Begin by heating the olive oil in a pan then add the diced onion with a good pinch of salt.
- Saute the onion until softened.
- Add the garlic and saute for another 2 minutes.
- Next add the mushrooms to the pan and cook on a high heat for 5 minutes. This should stop them becoming soggy.
- Once they have shrunk, turn the heat down and add the beans.
- Next add in the herbs, nutritional yeast, cream and plenty of black pepper then stir until combined.
- Season with a little more salt if required.
- Once the creamy sauce has begun to bubble, take off the heat to serve.
- Sprinkle over a scattering of parsley and enjoy.
