They say that breakfast is the most important meal of the day and there are plenty of articles out there that will tell you the importance of having a healthy, balanced breakfast.

But sometimes breakfast (or brunch) needs to be over the top and extravagant! Maybe it’s a special occasion or you just want a weekend treat, this is the recipe for you.

I love French toast because, when it’s stacked high, it looks so inviting. You can make it even more exciting by piling on the toppings. I also love the way that the toast is crisp on the outside but soft in the middle. It’s deliciously decadent.

This recipe will make 8 slices. The recommendation is for 2 slices per person but I won’t tell if you eat a slice or two more! Your secret is safe with me.

What is French toast?

French toast is a breakfast or dessert dish made up of sliced bread that has been soaked in a custard made of eggs and milk, that is sweetened with sugar and . These soaked slices of bread then get pan fried before being topped with fruits, maple syrup or even chocolate sauce.

A similar dish exists in the UK called “eggy bread” the difference is that “eggy bread” is usually savoury.

What bread is best for French toast?

Although you can use any type of bread to make this recipe, I love to use thick slices of white sandwich bread. It’s even better if it is a little stale. That’s because it soaks up the “custard” making for thick, sumptuous slices of vegan French toast.

I’d avoid using any bread that has large air holes as the “custard” just won’t soak in. You want as much of that sumptuous custard as possible and all of the vanilla and spice that it brings with it.

How do you make French toast without eggs and milk?

If French toast is ordinarily made with eggs and milk then how do you make french toast suitable for vegans?

The answer is a mixture of plant milk and two types of flour: cornflour and chickpea flour (also known as gram flour). Together the cornflour and chickpea flour bind and thicken the “custard” like liquid that the bread of is soaked in.

When the bread is pan fried this custard sets and forms a golden crust, just like it would if the dish had been made with eggs.

Suggested toppings

You can top Vegan French Toast with pretty much any sweet topping that you’d like.

My favourite is to top with fresh berries. You could also drizzle over chocolate sauce. Or why not serve with fresh cream or yogurt.

You could even try an American classic – vegan “bacon” and maple syrup.

If you want to be really over the top then why not add a sprinkling of icing sugar to finish it off.

Ingredients
  

  • 2 tbsp cornflour
  • 1 tbsp chickpea flour
  • 2 tsp cinnamon
  • 1 tsp vanilla paste
  • 1 tbsp golden caster sugar
  • 250 ml plant milk
  • 8 slices thick white bread
  • vegetable oil for frying

Instructions
 

  • Add the cornflour and chickpea flour to a dish along with the cinnamon, vanilla and caster sugar.
  • Slowly whilst in the plant milk until you have a smooth custard.
  • Heat a little oil in a frying pan.
  • Dip your first slice of bread into the custard mix; let any excess drip off back into the pan.
  • Fry the bread for 2 – 3 minutes until it is brown and crisp at the edges then flip and cook for another 2 – 3 minutes.
  • Keep the slices warm in a low oven as you cook the rest.
  • Serve with your choice of toppings.
