Mushroom Fried Rice

Mushroom Fried Rice is the perfect side dish for a Chinese feast. Serve with your favourite Chinese inspired dishes. Get the recipe below.

Simple side dishes

Fried rice is a class side dish found in Chinese cuisine. It's so versatile that it works well with a wide range of dishes whilst also tasting delicious all by itself.

What I love most about fried rice is just how easy it is to make. You can have it ready on the table in just 15 minutes! Even sooner if you use my precooked rice trick below!

Mushroom Fried Rice

Shitake mushrooms

For the best possible flavour for your mushroom fried rice, shitake mushrooms are essential. The have this amazing, intense, woody flavour which gives a real umami hit to the rice.

They also have a chewier texture than most mushrooms which means they hold their own against the rice.

You can of course use other mushrooms but for this recipe I'll always recommend shitake mushrooms.

In this recipe they are thinly sliced then stir fried on high and fast. They soak up all the flavour of the aromatics making them flavour bombs!

Cooked rice

Fried rice usually relies on leftover, cooked rice. But who has leftover rice? And sometimes you just don't have the time to make rice in advance.

My trick is to use microwave rice. It's actually already been cooked for you. All you have to do is microwave it or simply stir fry it with the mushrooms and aromatics.

Ingredients
  

  • 1 tablespoon vegetable oil
  • 3 cloves garlic minced
  • 1 tablespoon ginger minced
  • 3 spring onions thinly sliced
  • 10 shitake mushrooms sliced
  • 300 g rice cooked
  • 1 tablespoon soy sauce

Instructions
 

  • Heat the oil in a frying pan or wok then add the garlic, ginger and spring onions.
  • Fry the garlic, ginger and spring onions for 1 minute until they release their aromas.
  • Add the mushrooms and saute for 5 minutes.
  • Add the cooked rice and cook for 5-8 minutes or until heated through.
  • Season with the soy sauce and sesame oil.
  • Serve while piping hot.
