A simple salad
My recipes are often inspired by other cultures. This recipe came about because it was one of my favourite dishes from a local Lebanese restaurant. It may not be as authentic as the original but hopefully it’s a version of the dish that you too can make at home.
What is fattoush?
Fattoush is a salad made from toasted or fried pieces of khubz, a flat wheat bread that is usually baked in a brick oven. Pita bread is a good substitute and what I used for this recipe.
The toasted pieces of bread are tossed into a salad of leaves and fresh herbs as well as vegetables that have been cut quite chunky. Common vegetables include Persian cucumbers, onions, tomatoes and radishes.
The salad is often dressed with a sumac based dressing which gives a lemon-like flavour.
Variations
As well as switching up the vegetables in the salad you can tweak the dressing to include pomegranate molasses. This gives it a sweeter flavour but I prefer it just with sumac.
In my version I’ve included peppery micro greens as a garnish. You could also garnish with pomegranate seeds.

Ingredients
For the salad
- 1 pitta bread toasted and cut into small pieces
- 4 salad tomatoes seeds removed, quartered
- 0.5 cucumber cubed
- 1 small red onion thinly sliced
- 1 Romaine lettuce shredded
- 0.5 handful fresh mint cut into ribbons
- 0.5 handful fresh parsley finely chopped
For the dressing
- 100 ml olive oil
- 1 lemon juice only
- 0.5 garlic clove crushed
- 2 tbsp sumac
- salt and pepper to taste
