A vegan store cupboard staple

When I first learnt how to make vegan “parmesan” at a cheese making workshop by the KindaCo I had no idea how much of a game changer it would be. This delicious dust adds tonnes of flavour to pasta, pizza, salads and so much more! I will sprinkle it on just about everything given the chance. I’ve tweaked the recipe slightly and now I make sure I always have a large jar of it in my cupboard. This recipe will make enough to fill a 500 ml jar which should last at least a month depending on how greedy you are. If you use an airtight clip top jar like mine it will keep for ages. The only thing that will stop it lasting a long time is how delicious it is!

To make vegan parmesan you need just 5 ingredients: ground almonds, salt, onion powder, garlic powder and nutritional yeast. If you don’t own a blender, the beauty of using ground almonds means its not the end of the world, but for best results give it a whizz in a blender until its the perfect parmesan consistency.

The recipe

The recipe below suits my taste buds but feel free to play around with the levels of nutritional yeast, onion powder, garlic powder and salt!

Vegan Parmesan Cheese

Ingredients
  

  • 200 grams ground almonds
  • 6 tbsp nutritional yeast
  • 2.5 tsp garlic powder
  • 1.5 tsp onion powder
  • 0.5 tsp salt

Instructions
 

  • Add all of the ingredients into a blender and blitz on high until well combined and they have formed a fine powder.
