Creamy Mushrooms on Toast

These creamy mushrooms on toast are a great way to start the day. Enjoy them for a decadent breakfast or light brunch.

The most important meal of the day

I'm not here to teach you about the importance of eating breakfast. But, did you know that one in ten people skip breakfast thinking that it will help them to lose weight, yet breakfast skippers are twice as likely to reach for a bag of crisps mid-morning! (And crisps definitely are not on the diet!)

There are lots of other facts about how missing breakfast can influence your overall health so I've been trying to eat breakfast more often. I usually only eat breakfast (or brunch) at the weekend but with recipes like these Creamy Mushrooms on Toast breakfast seems all the more appealing.

Since starting to eat breakfast more often on those days where I skip it I’ve been feeling so lethargic without a morning meal. I’ve started to listen to my body and I now try to have breakfast pre-made when I'm on the way to the office (like these overnight oats or bircher). On the days I'm working from home I prefer a cooked breakfast!

I most definitely agree with independent dietician Nigel Denby who has commented on this year’s study saying: “People who eat breakfast have better concentration, more energy and tend to be less stressed.”

If these aren’t good reasons to eat breakfast I don’t know how else to convince you...except with a simple yet scrumptious breakfast recipe.

These mushrooms on toast are warming and comforting. Their creamy, mellow flavour is extremely indulgent, so perhaps best reserved for Sunday mornings. Though, should you have the time to whip them up every day I wouldn't blame you!

Creamy Mushrooms on Toast

These Creamy Mushrooms on Toast are the perfect breakfast, lunch or even supper.

Ingredients
  

  • 2 slices sourdough
  • 100 grams wild mushrooms
  • 1 teaspoon butter
  • 0.5 teaspoon olive oil truffle oil if possible
  • 1 clove garlic crushed
  • 2 sprigs thyme
  • 2 tablespoon crème fraiche

Instructions
 

  • Melt the butter and oil in a small frying pan.
  • Toss in the mushrooms and thyme with the crushed garlic; fry on a high heat until they are softened and hot through.
  • Lastly, add in the crème fraiche and keep stirring until the mushroom mix is piping hot.
  • Toast two pieces of wholemeal bread and spoon the mushrooms over the top.
  • Eat while hot!
