These Sticky Sausages with Caramelised Onions are a real winter warmer. They take the humble sausages and turn them into a delicious, sweet and savoury dish. Get the recipe below.

Simple suppers

This blog got its name because I was trying to create delicious meals that could be enjoyed by busy people with busy lives from my little corner of North London. That's why it's called Supper in the Suburbs.

Sausages are one of the best ingredients to have in the house if you're looking at making a quick and easy supper. And they don't take a lot of fuss to turn them into something quite special. they can be turned into a Spicy Sausage Stew or even used in this Sausage and Asparagus Risotto.

This recipe is even easier than both of those. It involves taking the classic combination of sausage and onions. With a little bit of honey and mustard these sausages become elevated from good to great.

How to make sticky sausages with caramelised onions

The easiest bit of this recipe is oven roasting some sausages then tossing them with honey and mustard. Yes, it really is that easy.

The hardest part is caramelising the onions. They need to cook low and slow, for at least 30 minutes. You really can't rush the process. But it is as simple as adding them to a pan with a little oil and salt. As they cook slowly in their own juices they caramelise, soften and become sweet. You don't need to add sugar, they have their own natural sweetness that the cooking draws out.

Although 30 minutes might sound a long time for cooking onions it's well worth it. The sausages will be doing their own thing in the oven while you stir them lovingly. You can have dinner on the table in just 30 minutes.

Ingredients
 
 

For the caramelised onions

  • 1.5 tablespoon sunflower oil
  • 2 small white onions
  • 1 pinch salt

For the sticky sausages

  • 2 tablespoon sunflower oil
  • 8 sausages pork or vegetarian
  • 4 tablespoon honey or maple syrup
  • 4 tablespoon wholegrain mustard

Instructions
 

To make the caramelised onions

  • Heat the oil in a large deep frying pan over a low heat.
  • Thinly slice the onions and add to the pan with a pinch of salt.
  • Cook slowly whilst the sausages are in the oven (see below) stirring occasionally until they are soft and golden.
  • If the onions begin to stick to the bottom of the pan add a splash of water.

To make the sticky sausages

  • Preheat your oven to 200 C / F / gas mark 6.
  • Add the sausages into a roasting tin and toss with the oil. Roast for 20-25 minutes or until browned and cooked through.
  • Once cooked, drizzle over the honey and add the mustard to the pan. Toss again and return to the oven for another 5 minutes.
  • Serve with the caramelised onions over the top.
